It is after such a long time that I am coming up with a recipe post on my blog!
I think I will be sharing many recipes in the days/weeks to come (healthy ones!!!) as I am actually working on daily menus for my sister in law who is on a diet to drop a little bit of Cholesterol! And nearly everyday I am creating new dishes for her based on her requirements!
Today it was a dish with Broccolis!!!
Ah the famous BROCCOLIS!!!
They are an amazing vegetables for sure and perfect for many diets...but not easy making them delicious with restricted products to use!!!
I had a try earlier today and happy to share the results with you!
Let's go for my : Broccolis & Baby Shrimps Refreshing Salad!
Ingredients you will need (for 2 portions) :
- 300gms Broccolis cut into florets
- 20gms Onions peeled and cut in thick slices
- 5gms Garlic peeled and finely sliced
- 80gms Tomatoes in dices
- 4cl Olive Oil
- 3pcs Roasted Garlic cut in slices
- 100gms Baby Shrimps
- Salt & Pepper as per taste
- Fresh Lime Juice (1pcs)
- 5gms Basil Leaves
Clean and Blanch the Broccolis!
Broccolis being the main character in our recipe, we must make sure not to destroy the good we have in them!
Meaning a perfect cooking time is necessary!
First...clean them and don't forget to peel the bottom part as you can see in the photo below!
Now cook them in salted boiling water!
They will take 2 minutes to be nice and crunchy!
Cool them asap in iced water!!!
To keep their lovely green color to the max! Overcooking will make you lose the color and most importantly the nutritional value too!
We need to have cooked broccolis that are still whole and not becoming a purée...
Cook the baby shrimps in the same water we cooked the broccolis...
The shrimps will take less than a minute in that boiling water to cook!
Now we are ready for the next cooking step...
Olive Oil + Sliced Raw Garlic + Sliced Roasted Garlic in a cooking pan!!!
Add in the cooked shrimps...put the fire on slow/medium! We simply need a little heat for everything to mix together while giving out an amazing aroma!
Toss in the Broccolis, Tomatoes and Onions!
Switch off the fire and toss everything well together!
Add in some freshly squeezed lime juice, season with salt & pepper and we are good to cool down the dish before we can plate!
Ps. You can eat it hot/warm too...but highly recommended to go for the chilled one!
Once cooled down and chilled...plate it and enjoy!
Place some fresh basil leaves on top and add in some more virgin olive oil...
You have a perfect dish that will surely do only good to your health!
And here we are friends, an easy to prepare dish with only couple of ingredients needed and in the end the result is simply awesome!
Such a dish will surely be enjoyed by everyone...not only by people on a diet, if you know what I mean!
We can of course elevate 'dishes meant for diet or sick people'... all we need is some patience and LOVE!
