A fruit when it is ripe and a vegetable when it is unripe - what comes to mind when you read this? An instant dessert when it's ripe and a vegetable dish when it's not, I'm talking about Jackfruit here ฅ^•ﻌ•^ฅ, isn't that amazing, two in one, as they say?
So, last Sunday, when we visited Aunt Velyn again, the oldies wanted to unwind again in there, so they decided to visit. I really thought it would take a month before we visited here again, but my guess is wrong, lol.
We were able to harvest four small jackfruit, actually, this is the last fruit on this tree. They decided to harvest them all because some of them were already rotting for unknown reasons. We can still save half of those jackfruits that are already bad, so we take them all. Aunt Velyn doesn't want it, and she's alone, so she can't eat a whole lot of it. She just gave these to us, two of them were given to Mama and to our neighbor, which is the old couple. They sell theirs, I think.
And then last Friday, we decided to cook it, it is one of our Favorite dishes that I and my oldies love. It is special because it is Homemade. We are the ones who prepare it, and we chose the ingredients that are okay for my oldies. Some really used other ingredients for this, just like fish sauce and dried anchovies, but that's also the reason why Mom can't eat them. So, we cook our own version, and it is a dish that is allowed for my Mommy F (人 •͈ᴗ•͈).
The dish was called "Ginataang Langka," or Jackfruit in Coconut milk, it is our own version because the ingredients used here are not the typical ones.
So, here are the Ingredients!

Let's start!
Let's start by opening the two coconuts, then grating them just like this. Mom grated them manually, for her, doing that is like an exercise. Normally, I should also help with grating it, but I just let mom do it because she seems so eager to finish it all.
My job here was to extract the coconut milk from it, I did it manually using my fist, lol. It's easy because we are so used to doing it. I mean, we've done this a lot of times already. After extracting the coconut milk from the grated coconut, I extracted it more using hot water. We will need that when boiling the Jackfruit for later.
Next is the jackfruit. Mommy D cut them into this. I want it smaller than this, but I don't know, she's the one who cut it so she chose whatever way she like in cutting it, lol. There's no problem, it will all end up in our belly anyways, lol. We have our own role in preparing this, so that's just it.
I just cut the onion, garlic, and ginger to this size, I crushed the garlic a little then cut it like this. Just cut them hatever size you desire, you can cut them however you like. As for us, we prefer it like this.
Now, in a pan, we didn't sauté this because we didn't want to add more oil to it. We just put the cut Jackfruit in the pan with the onion, garlic, ginger, salt, chicken cubes, and the second extract of coconut milk in the grated coconut, opened the stove, and let it simmer for 15 minutes.
We are stirring it continuously every five minutes just to coat the taste into it, le it boil, and let it boil until the fruit becomes soft.
Just like this. After 30 minutes, we put the first extracted coconut milk into it. We just let them boil for another 10 minutes, then we finally put in the vinegar, and that's it. Easy peasy and anyone can just do it.
Itadakimasu! Paired with Garlic Rice and Dried Fish, it was a perfect combo for me.
