Groundnut soup recipe

Hello guys... It's been a wonderful weekend and I must confess this has been the most busy but fun-filled have ever had in a long while. I was able to try out a particular dish i have been craving for and it was really awesome. The groundnut soup is so rich and nutritious. I will love you to plan for next week and give it a shot. Believe me, you will enjoy it just as I did.

Recipe:

1 cup of fresh groundnut
1/2 bottle of palm oil
Beef/Goat (any protein of your choice)
Cow skin (kpomo)
Dry fish
Stock fish
Crayfish
Seasoning
Salt
Onion
Pepper (fresh or dry)
Vegetable (pumpkin leaf)

Steps:

Put your fresh groundnut in a dry pot and fry for some minute. This will reduce the oil content, make the grinding easy so that your groundnut will be smooth after grinding.

Grind or blend your groundnut into powdered form.

Wash your beef and stock fish and put in a pot.

Add your salt, pepper, onion, seasoning and water. Steam for some minutes.

Wash your dry fish and cow skin. Add it to the pot abd allow it to steam for sometime till your meat is ready. Bring down your meat stock from the fire.

Place a dry pot on the fire and pour your palm oil into it. Allow the palm oil to bleach a little, then you add your chopped onions.

Add your grinded/blended fresh groundnut into the hot oil and fry it for few minutes.

When the mixture is completely fried, add your meat stock and stir carefully till it blends with the fried groundnut.

Add your crayfish and allow to cook for few minutes till the soup is completely mixed. Add more seasoning and adjust to your taste.

Wash and slice your vegetables (pumpkin leaf)

Add the vegetable into the boiling pot and allow to cook for few minutes.

Your soup is ready. Serve with either garri, semo, wheat, etc.
