Hello there foodie lovers! At last the typhoon is gone a d the weather is back to normal in times like this, it is beneficial to store some preserved foods where we can use especially on stormy weather when we can't anything. This shrimp paste is one of them. A little enhancement will make it even more palatable!
Here's what we need:
• Shrimp paste. Unlike in other region, Negrensis (People living in Negros) usually pound the small shrimps manually before sending it off to the market.
A complete line of condiment is good for this preparation such as:
•1/4 kilo Shrimp Paste
•1 clove Garlic
•1 pc.Onions bulb
• 2 inches Ginger
•4 ripe Tomatoes
•1-2 Bell Peppers
•1/2 cup Chili
•1/2 cup Brown sugar
•1 cup lard from meat's excess oil
•1 cup sliced meat, cubed
•Simply slice all the ingredients into small pieces.
I used the left overs of my humba to make it more tasty.
Using the excess oil from adobo or humba to make a lard is the main secret as flavor enhancer.
Preparation:
Saute the leftover meat with the lard and wait until the natural oil oozes out from the fatty meat * There's no need to add more cooking oil if there's natural oil

Add the spices one by one starting with the tomatoes, stirring gradually until flaky then add the rest simultaneously: ginger, onions, garlic, bell peppers and chili.
Lastly, add the shrimp paste. This is already salty so there's no need to add sugar. Mix it well with the sauteed ingredients.
I need to cover my head to avoid the strong aroma to stick on my hair. I usually do this especially when I fry fish as well. LoL!
There, it's already mixed and ready to eat!
This kind of side dish is really delicious. We also do this when we cook bananas, cassava or along with raw mangoes. For those with low budget, they use this as their main dish. It can be preserved for a week even without refrigeration when tightly sealed.
This is my finished product. Actually, I used to sell Chili Shrimp Paste with meat or with bitter gourd by tub for pick up only. Well, it's easy to prepare so I hope you like it and make one.:)
