Good day Lovely #Hive people. It has been a while since the last time I wrote. I have decided to take a break to focus on my job and my children, especially Robbie who requires more needs. But here I come and am excited to share other delicious homemade recipes you can try.
Egg drop Soup is a classic and delicious soup. We are using chicken broth or vegetable broth for this recipe, and that is actually the secret of making it savoury. The egg is beaten and dropped slowly into the soup that results in swirling tiny strands of egg. I also added corn (blended a bit) and mushroom for texture and extra nutrition.
Ingredients
2 or 3 Eggs, slightly beaten
Mushrooms, sliced
Corn kernels
Chicken broth / stock, 3 - 4 cups
Cornstarch, 2 tbsp
Salt
Pepper
Scallions
Preparations
Bring the chicken broth to a boil then reduce heat to low medium heat.
In a bowl, Dilute the cornstarch into a cooled chicken stock or cool water. Set aside.
- Pour in the beaten egg and stir constantly for a couple of minutes.
- Add the vegetables and let it cook.
Put in the diluted cornstarch and stir until you reach the desired consistency.
Simmer for 5 - 8 minutes and season with salt and pepper.
Garnish with green onion / scallions. Serve warm.
