The healthiest form of potato - Potato Salad

Hello friends!

It's me again after a long time! Unfortunately, I can't post from time to time due to my busy work. This really saddens me. Because I really enjoy my time here. I hope my busy work will be over soon.

I'm here again with another great recipe. You all know that I love to spend time in the kitchen. I often express this in my posts. I don't even have time to go to the kitchen these days. I'm having pretty bad days. After a long time, I had the chance to enter the kitchen. And I made an excellent potato salad. I can't wait to share the recipe with you.

Potatoes are one of my favorite vegetables. It is a versatile and very nutritious root vegetable. It is not considered a healthy food due to its high carbohydrate and starch content. But in fact, potatoes are a source of fiber, potassium, B6 and vitamin C. It is gluten free and very filling. It supports the digestive system. It is rich in antioxidants. If you want to consume it in a healthy way, you can cook it without peeling, steam or in the oven. Today I will share a very healthy recipe for you. We can say that it is one of the most beautiful forms of potatoes. I hope you like my recipe.

Ingredients for Potato Salad Recipe
•water (to boil the potatoes)
•potatoes
•fresh onion
•parsley
•lettuce
•salt
•sumac
•black pepper
•lemon juice
•olive oil

Put the water and potatoes in a saucepan. And we are waiting for the potatoes to be boiled. After about 15-20 minutes, we check the degree of cooking with the tip of the knife and take it from the stove and strain the water. We let it rest to cool. We put the finely chopped fresh onion, parsley and lettuce in a bowl with all the spices. Cut the cooled potatoes into cubes and add them in. Finally, add the lemon juice and olive oil. Mix all the ingredients well. Preferably, we let it rest a little in the refrigerator before serving. Then we can serve. Enjoy your meal!

Most of the potato salad recipes I encounter include copious amounts of Mayonnaise (or even worse a processed food substanced called "Miracle Whip.").

It is nice to see a healthier version of potato salad.

BTW You can serve healthy potato salad with pizza and the meal will become unhealthy again.

I love the mayonnaise and potato combination. But I try to make healthy recipes as much as possible.

Sorry to hear that you are having a bad time... But, if cooking made you better, maybe you should do it more often... :) After eating this delicious potato salad, you have to feel better!!

Cooking is a form of therapy for me! I feel happy when I cook. For that moment, I forget all my problems. And this potato salad was really delicious. I've had bad times, yes, but that's over now. :)
