Gizdodo is a delicious Nigerian dish. It is basically stew made with gizzard and plantains. Here's a simple recipe for you:
We'll start with the ingredients
Ingredients:
- 500g gizzard, cleaned and chopped(you can use either chicken gizzard or turkey gizzard)
- 2 ripe plantains, diced(or more if you want)
- 1 onion, chopped
- 3 bell peppers (1 red, 1 green and 1 yellow), diced
- 3 tomatoes, diced
- 2 cloves of garlic, minced
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- 1 teaspoon of dried pepper flakes (optional)
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Heat some oil in a pan and fry the diced plantains until golden brown. Remove and set aside.
- In the same pan, add more oil if needed and sauté(fry) the chopped onions and minced garlic.
- Add the chopped gizzard and cook until browned.
- Stir in the diced bell peppers and tomatoes, and cook for a few minutes until they soften.
- Season with thyme, curry powder, paprika, dried pepper flakes (if using), salt, and pepper. Mix well.
- Cover the pan and let it simmer for about 10-15 minutes, or until the gizzard is tender and cooked through.
- Add the fried plantains to the pan and gently mix everything together.
- Cook for another 2-3 minutes to allow the flavors to blend.
- Serve hot and enjoy your homemade Gizdodo!
