[KNIVES UP!!!] Chef Straykat Cooks No.11: Creamy Chicken Sopas (Creamy Chicken Macaroni Soup)

Good morning! Most parts in my country right now is experiencing rain due to an incoming typhoon. I hope my fellow Filipinos here are safe from flood .

Anyway, weather gets cool when it rains. And it's during these times that we crave a warm soup to sip. The typhoon will be around until the weekend so I thought maybe it's time to share my Creamy Chicken Sopas recipe.

(CREAMY CHICKEN MACARONI SOUP) ~

Chicken Sopas or Chicken Macaroni Soup is a milk-based soup with strips of chicken meat, vegetables (mostly carrots, celery) and hard boiled egg. Some like to add slices of hotdog, cheese, etc.

Chicken Sopas is commony sold at school canteens and karinderya (small eatery usually on the roadside). Some restaurants also sell it. It's usually eaten as a snack but you can definitely have it as a meal. I remember back in high school, my classmates usually eat this during our morning recess. During those years, a bowl of it only costs Php10 and an additional Php5 for the boiled egg.

I have always wondered how to make this soup because my mother really makes good chicken sopas. I tried to make it last year but it was a fail. I used powdered milk because I ran out of evaporated milk. The taste didn't turn out very good. But fast forward today, I can now make chicken sopas that I can be proud to share.

So let's begin!!!


INGREDIENTS

• 1 Chicken Breast
• 5.5 Cups Water + 1 Cup
• 1 Cup Evaporated Milk
• 2 Hotdog (thin slices)
• 3 Tbsp. Butter
• 1 Onion (diced)
• 1 Tsp. Garlic Powder
• Ground Black Pepper
• Salt
• 2 Tbsp. Fish Sauce
• 1/4 Cup Cheddar Cheese (diced)
• Onion Leaves
• 6 Boiled Eggs
• 1 Carrot (diced)
• 1 Chicken Broth Cubes
• 2 Cups Elbow Macaroni Pasta




PROCEDURE


(1) Boil the eggs and set aside. Remove the shell when the eggs cool down.

(2) Put butter on pot and saute onion, hotdog, and garlic powder. Wait for the onion to get aromatic or when it becomes soft.

(3) Add the 5.5 Cups water and bring to a boil.

(4) While it's boiling, add the chicken breast. Cook the chicken for at least 15 minutes. Yup, boil it with hotdogs and onions.


(5) Remove the chicken breast from the pot and shred into thin strips then set aside. This time, add in the carrots, chicken broth cubes, fish sauce, and dash of ground black pepper. Stir and mix.

(6) Shred the chicken into thin strips and bring back to the pot. Then add the macaroni pasta. Cook macaroni pasta for 10 minutes or follow the cooking instructions written on the packaging of your pasta.

(7) When the pasta is cooked, add the evaporated milk, boiled egg, cheese, and onion leaves. In my case, I didn't add the boiled egg while cooking because the soup will overflow from the pot. I prefer it separate from the soup and only add it when I have poured the soup into a bowl.

(8) Simmer for 3 minutes then add pinch of salt, some ground black pepper, more fish sauce as needed. OR you can choose to omit the salt since we already have fish sauce in the recipe. Also add the 1 Cup of water if you think the soup looks too thick.

I have already scooped some into a bowl on this photo. Remember that if the soup is still too dry for you, you can add more water. But! Don't forget to taste your soup when you have added extra water. If the tastes becomes less milky, pour in more evaporated milk to adjust the taste according to your preference. In my case, I like my soup creamy that's why I only stick with the measurements I have posted here.

And it's that simple to make the Chicken Macaroni soup! I didnt add celery as I don't have it when I made this soup but it's still equally delicious with the macaroni soup with celery. You know, I'm really happy that I can now make a delicious chicken macaroni soup that really satisfy . I enjoy eating it on a rainy morning like today.

This recipe makes about 6 to 8 servings. This is enough to feed your entire family. You know, I don't have the price estimation for this recipe but it's also among the budget-friendly foods for sure. :)

I hate celery too but I really like the flavor once it is cooked! I feel the same way about cilantro. I cannot eat cilantro because I apparently have a gene in my DNA that makes it taste like soap. But I love it in caldo de res (beef soup).

I'm trying to remember how cilantro tastes like but I can't. You're mexican, right? So are there many mexican foods that you can't eat because of cilantro?

Yes, I am Mexican 🇲🇽 !
The funny thing is I still eat those foods I just don't put any raw cilantro on it. So I get funny looks when I ask for my tacos plain (no raw onion either)!
Ummm I want to try to describe its taste to you but I don't think I should be the one since the taste is different in me haha

Good luck finding cilantro!
My sister had trouble finding it (she lives in South Korea) so we sent her some seeds by mail. Sometimes you can find the seeds labeled by their spice name: coriander!
I just bought some more the other day because I always lose the seeds by springtime.
