Pasta With Zucchini [ENG/ESP]

Hello friends of Hive! Happy Friday, today I tell you how to make a delicious flourless and very healthy pasta.

Hola amigos de Hive! Feliz viernes, el día de hoy les cuento cómo hacer una rica pasta sin harina y muy saludable.

Lately I have tried to reduce the consumption of flour and for the pasta I found an option that I quite liked and apart from that you are satisfied with a small portion. For this I used:

  • 1 large zucchini.
  • ½ onion.
  • ½ green pepper.
  • cooking cream or heavy cream.
  • 300gr of chicken (skinless, sliced, preferably breast).
  • Parmesan cheese to taste.
  • 1 teaspoon of seasoning of your choice.
  • 2 tablespoons of oil.
  • salt to taste.

Últimamente he tratado de bajar el consumo de las harinas y para la pasta encontré una opción que me gustó bastante y aparte quedas satisfecho con una porción pequeña. Para ello utilicé:

  • 1 calabacín grande.
  • ½ cebolla.
  • ½ pimentón verde.
  • crema para cocinar o crema espesa.
  • 300gr de pollo (sin piel, en rodajas, preferiblemente pechuga).
  • queso parmesano al gusto.
  • 1 cucharadita de condimento de tu preferencia.
  • 2 cucharadas de aceite.
  • sal al gusto.

1 Add oil to a large skillet and fry chicken until fully cooked and golden brown, add salt and seasoning. Set the chicken aside on a plate.

1 Agrega aceite a una sartén grande y fría el pollo hasta que esté completamente cocido y dorado, agregué la sal y el condimento. Ponga el pollo a un lado en un plato.

2: We cut the onion and the paprika into small pieces to fry them in the same pan where we had cooked the chicken.

2: Cortamos la cebolla y el pimentón en trozos pequeños para sofreírlo en el mismo sartén donde habíamos cocinado el pollo.

3: wash the zucchini, then grate it into strips until you reach the center of the zucchini, it is important not to put the seeds. There are graters that have the shape of spaghetti, but in my case I used a potato peeler to get fine and uniform slices. Then add it to the pan where you are frying the onion with the paprika.

3: lava el calabacín, luego rállalo en tiras hasta llegar al centro del calabacín, es importante no poner las semillas. Hay ralladores que tienen la forma del espaguetti, pero en mi caso usé un pelador de papas para tener lajas finas y uniformes. Luego agrégalo al sartén donde se está sofriendo la cebolla con el pimentón.

4: In another larger pan or pot, add the heavy cream and the spinach leaves that must be previously washed. Stir until the cream begins to thicken and the spinach is reduced and to thicken it up a bit, add a bit of Parmesan cheese.

4: en otro sartén u olla más grande, agrega la crema espesa y las hojas de espinaca que deberán estar previamente lavadas. Revuelve hasta que la crema comience a espesarse y las espinacas se reduzcan y para darle un poco más de espesor, agrega un poco de queso parmesano.

5: Add all the ingredients to that sauce and stir until everything is uniform.

5: Integra todos los ingredientes a esa salsa y remueve hasta estar todo uniforme.

6: Serve on a plate and add Parmesan cheese on top.

6: sirve en un plato y agrega queso parmesano por encima.

Although spaghetti is made with zucchini, it is a dish that leaves you quite satisfied without needing to serve yourself a large portion. A great option to eat healthy and rich. I hope you liked this recipe, greetings!
