Dried anchovies with pepper stock- Traditional food in Vietnam.

Today I was given a bag of dried anchovies by a friend and she showed me how to cook them deliciously. I used to see this kind of fish at the supermarket but I usually skip them, but today when I tried cooking this for the first time I was surprised because they are so delicious when eaten with hot rice. I was like, "Oh geez, why do I know how to cook this until now because they are really delicious, they have the fatty taste of fish, the salty and sweet and spicy taste of pepper, it's great". And I want you to know this dish, this dish seems to be very popular in Vietnam and especially in the northern regions in Vietnam, this dish can also be called a traditional dish in family meals. Vietnamese family. I hope if you see this in the supermarket, try to buy it and cook it the way I guide you, maybe it's your new favourite food? Who knows, right?

Food ingredients include:

  • Dried anchovies are "Often sold in supermarkets"
  • Fish sauce (Indispensable ingredient)
  • Street
  • Scallion
  • Garlic
  • Cooking oil
    _ Purple Onion
  • Pepper
  • Chili

Cooking is as follows:

Step 1: You soak the fish in cold water "just the amount you want to cook, for me in this recipe about 50-80g." Soak for about 2-3 hours.

Step 2: After the fish is soft, wash it thoroughly with water then drain.

Step 3: Crush the purple onion, and garlic and put the oil in a hot pan, then add the minced purple onion and garlic to the island until fragrant, then add the fish and stir for 1 minute, then turn off the heat.

Step 4: Make caramel for the dish to have a nice brown colour; Put 3 tablespoons of sugar in a hot pan and add 10ml of filtered water and cook on low heat until the sugar is brown like in the picture. Then put the fish on the island evenly, so the whole fish has a nice brown colour.

Step 5: Add spices to the dish: 4 teaspoons of fish sauce, 1/2 teaspoon of salt, 3 tablespoons of sugar, 2 tablespoons of cooking oil, and 20-30ml of water. Cook the dish in medium-low heat for 5-8 minutes until the water is gradually drained, then turn off the heat and add green onions and pepper.

Finally, put the dish on a plate and enjoy it with hot rice.
