Gluten-free, sugar-free, and dairy-free Vietnamese rice: A delicious option for allergy and autism sufferers

Would you like to enjoy a delicious Vietnamese rice without having to worry about gluten, sugar or dairy? Then this recipe is for you! In this post, I present to you a gluten-free, sugar-free and dairy-free version of this delicious food, adapted for people with allergies or autism.

It's important to mention that avoiding gluten, sugar and dairy is not only for people with allergies, but also for those with autism as these substances can cause health problems in this population.

The recipe that we share with you today is gluten-free, as it avoids the use of soy sauce and oyster sauce, which often contain gluten. A natural alternative to sugar is also used instead of refined sugar.

Ingredients:

1 kilogram of pork loin.
2 cups of rice.
150 grams of turmeric powder.
150 grams of grated or powdered ginger.
200 grams of chili.
1 diced green or red bell pepper.
3 eggs.
1 tablespoon of salt.
2 carrots cut into cubes.
150 grams of chives.
150 grams of ginger.
Pepper to taste.
1/4 liter of oil

Preparation:

Start by cooking the rice, in a hot pot add three tablespoons of oil and then add two cups of rice and turmeric powder.

In a skillet, cook the pork loin over low-medium heat, previously marinated with salt, ginger, pepper, and cut into small cubes.

In a pot, place water to half and cook the cubed carrots until they soften. Remove the water and set aside.

In a skillet with the remaining oil, add the chili, bell pepper, and ginger and cook for a few minutes.

Add the carrots, bell pepper, ginger, chopped chives, and chili to the skillet or bowl with the cooked pork and mix well.

Beat the eggs and add to a skillet with hot oil and salt (optional). As an omelette, refrain from stirring the beaten eggs. Both sides of the omelette should be cooked over medium heat. Then remove and cut into strips.

Add the cooked rice to the skillet with the pork and other cooked ingredients and mix well.
