Today, we're taking on the 100-peso challenge, and I'll show you just how far that 100 pesos can go in creating a delicious meal.
We'll be preparing Fried Fish and Sautéed Squash with Coconut Milk.
I got this fish for 60 pesos at the local market, the squash cost me 20 pesos, and the other ingredients are budget-friendly too: ginger for 5 pesos, garlic for 5 pesos, 5 tomatoes for 5 pesos, and an onion for 5 pesos. I also have some leftover malunggay leaves from yesterday's tinolang manok and some ready-made coconut milk.
First, clean the fish and season it with salt. Good thing the local vendors at the fish market always offer to clean the fish first so I only have little cleaning to do when I get home. Just needed to remove a few gills. Now we will heat some oil in a pan and fry the fish until cooked through.
To know if the fish is ready to flip, listen for a change in the sound as it cooks. When it goes silence then that’s the time to flip it over. A trick I learned from my Mom. Once both sides are cooked, set the fish aside and move on to the vegetables.
Wash and prepare the vegetables by peeling and cutting the squash into cubes. Cut the tomato into strips, dice the onion, and slice the ginger. Crush the garlic.
In a hot pan with a small amount of oil, sauté the garlic, followed by the onion, ginger, and squash. Add some water and oyster sauce, then cover and cook. Season with salt and pepper to taste.
When the squash is soft and the water has reduced, add the leftover coconut milk. I prefer using this brand because it's convenient and tastes like real coconut milk without the hassle of making it from scratch every time.
Let it simmer once more, and once everything is cooked, serve it on the table with the fried fish paired with your favorite dip.
