Christmas and the New Year are celebration of love. Many people have different ways of celebrating them, but for us Africans, it is a season of cooking. During this season, you are always in the kitchen cooking different dishes, both foreign and local.

I am a Nigerian from the Igbo tribe. We have many local dishes of nsala (white soup). This delicacy makes me long for Christmas. During this celebration, we cook more of the local dishes.

I enjoy many local dishes; you see, this particular one is my favorite and very delicious.

This soup is rich in vitamin C. Before you cook it, your pocket will be loaded with cash. And is the only reason that you don't add red oil? Many people cook their white soup with chicken and assorted meat; for me, I prefer usually catfish. Stay tuned as I tell you how to prepare this delicacy.

Ingredients
Yam
Utazi, please forgive me; I don't know the English name.
Catfish
Crayfish
Seasoning to taste
Salt to taste.
Pepper
1/2 table spoon of uziza seed (optional)

Steps on how to prepare white soup

Step 1: Peel your yam to your preferred size, wash properly, and boil for some minutes.

Step 2: Cook the yam until it is soft and blend with a mortar or blender. I also blend my uziza seed with crayfish. I wash and cut my utazi leaves.

Step 3: I boiled hot water to wash my catfish. I soak it for about 6 minutes for me to be able to wash out the slime from the catfish.

Step 4: I put my catfish in a clean pot. I add some seasoning, such as maggi, salt, onion, and dry pepper. I allow it to heat for a minute before I add water. After some minutes, I add my blended yam. I make sure it dissolves. I add my blended uziza leaves, my pepper, and crayfish, and it turns out very well. At this point, the soup is almost ready after cooking for 5 minutes. I taste to check if I will add another season.

Step 5: Add a little utazi leaf; the leaf should be light because it is white soup. White soup doesn't require much; leave it most be lite, allow it to cook for some seconds, then turn off the heat.

Soup is ready you can serve with any swallow . please you all should come and eat.
