My wife followed in the footsteps of her mother and her grandmother and cooks with simplicity, but believe me when I say it is extremely effective. I'm still around!!! Hahahahahahahahaha!!! I would put her up against 4 and 5 star chefs for flavor, for sure.

Porcupine Balls 1

Ingredients

1/2 lb ground beef
1/2 cup of cooked rice
Worcestershire sauce
salt
pepper
garlic 1 garlic clove crushed or to taste
paprika
1 10.5 oz can of tomato soup
1/2 to 1 cup beef broth
rotini or whatever pasta you wish
or over rice, mashed potatoes or not even over anything but as a stew.


The hardest part of making porcupine balls is catching and holding them, as porcupines can be quite squirmy hahahahaha!!!


  1. Mix ground beef, rice, Worcestershire sauce, salt, pepper, garlic, and paprika together to make the meat mixture for the porcupine meatballs.

  2. Shape meat mixture into meatballs.

  3. So then toss the meatballs in the frying pan and brown them. (Distance is subjective and optional, no fair measuring to see who wins bwahahaha!)

  4. Drain the grease out of the pan and add the beef broth to deglaze the pan. (If you do not know what deglazing is, a quick internet search is excellent for that.) I decided to have mercy on those who are culinary challenged Hahahaha!!! Here is a most excellent and humorous article:

  5. Add the tomato soup to the beef broth and mix well, then return the meatballs to the pan, and let simmer until they are done (roughly 1/2 hour to 40 minutes depending on the size of the meatballs).

Serve over or with any pasta of your choosing, rice or potatoes. Make it what you want it to be lol.
We used Rotini.

Mi esposa siguió los pasos de su madre y su abuela y cocina con sencillez, pero créanme cuando les digo que es sumamente efectivo. ¡¡¡Todavía estoy por aquí!!! Jajajajajajajajaja!!! La pondría contra chefs de 4 y 5 estrellas por su sabor, seguro.

Bolas de puercoespín 1

Ingredientes

1/2 libra de carne molida
1/2 taza de arroz cocido
salsa inglesa
sal
pimienta
ajo 1 diente de ajo machacado o al gusto
pimenton
1 lata de 10.5 oz de sopa de tomate
1/2 a 1 taza de caldo de res
rotini o la pasta que quieras
o sobre arroz, puré de patatas o ni siquiera sobre otra cosa que no sea como guiso.


La parte más difícil de hacer bolas de puercoespín es atraparlas y sostenerlas, ya que los puercoespines pueden ser bastante inquietos jajajajaja!!!



  1. Mezcle la carne molida, el arroz, la salsa Worcestershire, la sal, la pimienta, el ajo y el pimentón para hacer la mezcla de carne para las albóndigas de puercoespín.

  2. Forme albóndigas con la mezcla de carne.

  3. Entonces echa las albóndigas en la sartén y dóralas. (¡La distancia es subjetiva y opcional, no es justo medir quién gana bwahahaha!)

  4. Escurra la grasa de la sartén y agregue el caldo de res para desglasar la sartén. (Si no sabe qué es el desglasado, una búsqueda rápida en Internet es excelente para eso). Decidí tener piedad de aquellos que tienen desafíos culinarios ¡Jajajaja! Aquí hay un artículo excelente y divertido:

  5. Agregue la sopa de tomate al caldo de res y mezcle bien, luego regrese las albóndigas a la sartén y deje hervir a fuego lento hasta que estén listas (aproximadamente de 1/2 hora a 40 minutos dependiendo del tamaño de las albóndigas).

Sirva sobre o con cualquier pasta de su elección, arroz, o papas. Hazlo como quieras que sea jajaja.
Utilizamos Rotini.

Hahahahaha, I think you'll like this - it's basically season to taste!
Suggestion, don't leave food too long in the freezer, it'll get freezer burn and doesn't taste as good.

More Paprika and maybe some white pepper and Basil to cover that bit of freezer burn.

Meatballs recipe from C finally on a blog! Thank you now I can steal it, it took you some time but it’s appreciated! The worchesyershiresauce is the most difficult to write and pronounce hahahahah
The meatballs look so delicious and the combo with rice I never heard of so I am for sure gonna try. And the fact she made them all even size is a chore on it’s own. So yes a five star ⭐️ dish for a lovely cook. You should stalk her in the kitchen more and share C-originals in a cookbook sequel.
Happy I made you do it ( read forced you) and after reading I have to conclude it’s a must make recipe and it goes to show that size does matter!

Not sure about a cookbook, it's hard to her in the right mood for us to get the actual recipes down, as a lot of them are "throw in whatever we have for left-overs" in the fridge. Working on it though hahahahaha!!!

Oh yeah, that does look pretty fantastic alright. I'm usually pretty lazy when it comes to meatballs and find that those from the frozen section work well for my purposes. I'm going to save this particular recipe though! I think that'd be really fantastic over some rice.
