Everyday there are triggers that can really make you angry and sad and most ladies can definitely agree with me that there's a particular dish that can definitely calm you down if prepared for you or by you or even as a gift from someone else.
For me that dish is definitely rice and stew with some fried plantain (dodo as we Nigerians call it) by the side, whatever made me angry or sad just vanishes. My close friends and loved ones know how I fancy that dish so much, I can eat everyday without getting tired, it just gives me joy while I eat it. I really can't explain why but it definitely is my best at the moment, I know as an igbo girl, I am supposed to prefer my local dishes, yeah there are dishes I like but it's definitely Rice and Stew anytime any day. And it's also fast to make too.
Firstly, you parboil your well washed rice and set it aside. Get your ingredients for the stew. I'll be listing them in case anyone wants to try to make it. You'll be needing some tomatoes protein (beef,fish,meat, chicken), anyone of your choice, even skin meat is preferable. Groundnut oil, some seasoning cubes, salt, onions, some fresh or dry pepper, anyone you prefer but I'll love to do fresh pepper, dome spices or veggies. That's all you need.
Your oil into the pot, and remember on very low heat, a pinch of salt and then your onions, go ahead to add and stir your tomatoes. For me I love to add my fish, skin meat or beef at that point, cover and leave to steam, go ahead to add other ingredients, leave to steam a little and it's done. I fry my already sliced plantains and my dish is good to go.
