We had a meeting that was held is Sacramento... and a fruitful end to a workweek. I promised my staff that I'd take them out after the meeting. We finished the meeting just in time for an early dinner.
Have you eaten in a Ramen House before?
A Ramen House serves traditional Japanese cuisine serving primarily Ramen soup. The soup is prepared by boiling meat and bones patiently for hours to achieve a rich, milky and smooth texture. No artificial flavoring is added. Then they it with the springy Ramen noodles. It is extremely satisfying.
The restaurant was packed inside! I guess we were lucky, we got seated right away. They had the table ready for us!
I wish took photos of all that was ordered because there were eight of us. I just took those adjacent to me.
Shiru Tonkotsu Ramen
Tonkotsu Ramen is a pork based noodle soup. It has the meat and vegetable as Kuro Tonkotsu Ramen except for one ingredient.
Tonkotsu ramen is made with pork bones—in particular, pork hock and trotters. They are boiled for several hours until the collagen and fat break down and liquefy. Collagen, found in the bones and in the tendons that surround the bones, makes the broth dense and slightly sticky.
Kuro Tonkotsu Ramen
This was what I ordered. Kuro Tonkutso Ramen is pork broth noodle soup with Ma-yu, a black garlic oil.
It had BBQ pork, steamed cabbage, black mushrooms, red ginger, green onions, sesame seed and Ajitama, which is seasoned egg.
Miso Ramen
Soy bean paste noodle soup with BBQ pork, steamed cabbage, black mushrooms, season egg, green onion, and corn.
Miso ramen broth may be clear broth (shio or shoyu) or tonkatsu broth to which a generous amount of miso paste is added. Miso ramen broth is a sweet-tangy thick liquid. Miso is a paste made by fermenting soy beans. The fermentation process is essentially where the tangy flavor comes from. The sweet component is derived, at least generally, from the other ingredients added to the soy beans during fermentation.
Karamiso Ramen
In its name, “Kara (辛)” is the Japanese word for “spicy”, so Kara-Miso Ramen is literally a spicy bowl of miso ramen. This one is made of season ground chicken, vegetables, and chilli threads.
The food was lovely, the atmosphere was great, and prices was reasonable (each bowl of soup was $13.75)! We were totally satisfied.
