Yesterday our new neighbor gave us plenty of Kangkong leaves freshly harvested from her garden at the back of her house, this was because last week when I went to the mall, I just walked and passed by our neighbor's house, timing she was outside. We chat for a while and I spotted she have a healthy kangkong garden, so, I ask her if I can buy some someday. She told me she will just give it to me no charge. Wow, a kind neighbor.
She gave us one grocery bag full, I kept first on the fridge. Then, yesterday I decided to cook some. Just simply sautee it because I do not have available ingredients.
I only sautee it with onions, small amount of soy sauce and coconut vinegar, a dash of salt and dash of black.
With that simple cooking not much ingredients my hubby enjoyed eating without the rice because I also refrain hubby from eating cooked rice so that his blood sugar will go down.
This morning I let our son did the marketing. He bought Pompano fish my favorite.
I cooked it with the kangkong leaves again. Placed garlic including the skin...
Added 3 tbsp of soy sauce and 3 tbsp of coconut vinegar and 2 glass of hot water, let it boil, then I add the kangkong leaves.
For just 10 minutes it is done, cooked already. But, I forgot to add ginger and black pepper, ahahaha, but still yummy!
In our dialect when sauteed kangkong is the dish it is called "Apan-Apan".
Lunch was ready, I let hubby eat just a little cooked rice because his blood sugar went down this morning. He enjoyed much his meal.
Just until here, this is my version of Simple Kangkong dish. A must for Senior Citizen's diet. Mo
