Hello Hivers!I love this challenge about stir-frying! As usual, I woke up late and cooked for luncheon so for myself, it's already my brunch!:)
First, I prepared sauteed shrimps then followed by breaded chicken, all stir fried because it's easier to cook and fitted for today's good weather.
Ingredients:
1 kilo shrimps
1 clove garlic, minced
1 bulb onions, sliced
3 medium sized ripe tomatoes
1 bell pepper, diced
1/2 tsp black pepper
1/2 tsp basil
1 tsp ginger powder
1 cup tomatoes sauce
1/2 cup vegetable oil
Salt n seasoning to taste
- Heat the wok first then add the vegetable oil.
- Add the tomatoes stirring occasionally until mushy to bring out it's natural sauce.
- Stirring, add onions followed by garlic. This will prevent the garlic from getting burnt.
- Add the washed shrimps and stir.
- Add the bell peppers, basil, black pepper, ginger powder then salt and seasoning, stirring occasionally.
- Lastly, add 1 cup of tomato sauce then cover for 15 minutes only.
Hmmm yummy!
Breaded Chicken
Ingredients:
•500gms marinated chicken •cuts
•Bread crumbs
•Corn starch
•Vegetable oil
- Mix 1/2 cup corn starch with 1/2 bread crumbs in 1 cup of water.
- Roll the chicken cuts over the mixed stuff
- Sprinkle again with bread crumbs and press it lightly to let it stick on the base part to prevent segregation.
Actually, I only fried 4 cuts as there's only two of us. I will cook the rest for dinner. It's crispy when it's newly cooked,right?

Noodles w/ Mixed Veggies
It is said that stir frying originated in China especially when it comes to mixed veggies, meat and noodles as the main ingredients. Well, we always have fresh veggies here so it's easy to prepare it.
Ingredients:
• 4 packs Instant Noodles
• Broccoli
• Chayote (pear squash)
• Carrots
• Cabbage
• Bell peppers
• Garlic
• Onions
• Vegetable oil
I specifically didn't use meat since the instant noodles are chicken flavored already. In this situation, all I need to do is blanch the veggies to prevent it from overcooking.
- First, saute the spices over low heat.
- Add 1 cup of water and let it boil.
- Add the noodles along with the blanched veggies and the mixed flavouring, stirring occasionally with two forks until desired crispness is achieved. The veggies should be half cooked only to maintain the crispiness of veggies and noodles.
It's very simple guys but savory!
Sauteed Bitter Gourd (Ampalaya)
Ingredients:
1 Ampalaya fruit, thinly sliced
1 clove garlic, minced
1 bulb onion
1 bell pepper, diced
1 cup meat, diced
1/2 cup shrimp paste
1/4 brown sugar
- Saute the spices then add the meat stirring occasionally until well done.
- Add the shrimp paste. Stir over low heat then add the brown sugar.
- Add the drained bitter gourd. Continue stirring until cooked. Don't add water.
- This dish can be preserved with more shrimp paste on it which could last for a week once refrigerated. This will serve as a side dish as well.
Note:
- Don't add salt because the shrimp paste is already salty but rather add the sugar to regulate the taste.
- (Before cooking) To lessen the bitter taste, put a little amount of water add 1 tbsp. salt and soak the raw bitter gourd for at least 5 minutes and drain water (don't squeeze)
My Stir-Fried Dishes for Special Occasions
Empanada
This special Empanada has fillings with sauteed meat and potatoes with quartered boiled eggs and raisins. It is carefully wrapped and stir fried with enough cooking oil to make it crispy.
Lumpia Shanghai
Lumpia Shanghai is filled with grounded meat, garlic, onions & bell peppers added with salt and seasoning. We cook it first before wrapping and have it stir fried. This will serve as pick foods on special occasions.
Tocino
I prefer to prepare this Tocino dish myself to make sure that it's fresh. I simply ask the butcher to make thin slices for tocino dish and they'll do it for you. I mix it with ground garlic, onions and bell peppers and then add 1 pack of tocino mix (good for 1 kilo as described at the back of the sachet). I add black pepper and lemon to enhance the flavor.
- Add 2 cups of water with 1/2 cup of vegetable oil and let it boil until done.
- When the water is dried, the oil will start to sizzle, stir occasionally until the natural oil of the meat ooze out thereby stir frying the meat. Cook over low heat to avoid from getting burnt!
Beef Steak
The process is done same with the Tocino preparation but the spices are wider and with some twist:
Prepare a set of Onion rings and bell peppers.
Make a gravy with 2 cups of water with 1/2 corn starch.
Once the meat is done, add the onion rings and bell peppers stirring slowly.
Finally add the water with corn starch and let it dissolve over the cooked product. It's really delicious guys!
Breaded Salmon
This savory dish is prepared same with the breaded chicken. A cucumber & carrot salad with mayo will make it complete!
As a mother and grandmother, I see to it that my family is well fed whenever we are gathered together. As you can see, there were stir-fried Gambas, Lumpia, Escabeche and Deep-Fried whole Chicken among others.
