Yes, my entry for this Contest Theme is Jackfruit, a species of Artocarpus, whose botanical name is Artocarpus heterophyllus.This is my 2nd favorite fruit.
Last February 15,we travelled from Carcar City to Lapu-Lapu City, to fetch my daughter, granddaughters and great granddaughter then went Villa Leyson, Talamban, Cebu, to the house of hubby's Aunt who just came from Bantayan Island, Cebu. She is 82 yrs old already and we are sad she don't know us anymore, she can't even recognized her nephew, my hubby anymore. So, she will not be bored just at home, hubby invited her and her daughter to travel with us, just roamed around Cebu City.
First we went to S&R Pizza, ordered two rounds of 18" pizza because one is not enough for all of us. We also took pictures there because it was the first time hubby's Aunt to hug her Great great granddaughter, my daughter's granddaughter and that makes me the great grandma.
After eating, my hubby suggest we went to Busay so that her Aunt can experienced the fog but when we were there the sun was up so no fog. Oh, oh...we just bought fresh vegetables like cauliflower, pechay, eggplants, whole Jackfruit and cooked yellow corn which were hot,big ones, sweet and sooo yummy!
We bought how many kilos of vegetables in return we got discounts and freebies.
The vegetable store owner gave hubby a señorita banana, I told her only one because hubby is diabetic.
Plus, a marigold flower plant for my duaghter, who like me also loves flowers.
From there it was almost dark we passed by Bukid Tres Restaurant and dine in there then sent them home to Talamban and Lapu-Lapu City, to Carcar City, super tired when we arrived home about 11pm. But, I did not forget about the whole Jackfruit I kept in the used parcel box. They said I must keep in the sack of rice but I opt to the parcel box because of experienced with the unriped Avocados easily becomes ripe in a paper bag or parcel box.
Past few days we call smell the ripe Jackfruit so I decided to open it and make ice cream. When I opened the fruit it was still hard a little. So, I cut it into small pcs, very timely I still have two packs of Nestle cream, added to the small pcs Jackfruit plus 4 drops of vanilla and placed them in the freezer.Later transferred to the fridge so it will not become hard.
The following morning, oh la la, the jackfruit ice cream became a salad hahaha! I placed on the wheat bread partnered with 15n1 Coffee, our morning breakfast was a satisfying one.
If you have Jackfruit, guys, try this Jackfruit salad, smells sooo good!
