In Thailand, mangoes are very fruitful in summer. which will be eaten raw dip in sweet fish sauce or shrimp paste is sour and spicy. Ripe mangoes are sweet and delicious.For the popular menu from mango that many people like is mango sticky rice. It is a dessert that consist of sticky rice with coconut milk served with fresh mangoes, sometimes topped with coconut milk and fried mung beans. Today I am proud to present mango sticky rice that cooked by my mom.
Ingredients
Glutinous rice snake fangs 1 kg.
3 cups of coconut milk.
2 cups of white sugar.
Salt 1 teaspoon (adjust/reduce according to preference)
7-8 pandan leaves.
Procedure
Step 1. Wash the glutinous rice thoroughly and soak it in water overnight.
Step 2. Add water to the steamed batter. Bring to a boil over high heat, wait until the water boils, then drain the sticky rice water and wrap it in a thin white cloth. Place 3-4 pandan leaves and steam them.
Step 3. Steam for about 30 minutes until the glutinous rice is cooked.
Step 4. Divide the coconut milk ¾ cup. For the rest of the coconut milk, put it in a small pot. Add sugar and 1 tsp of salt, then heat over low heat.
Step 5. Put the remaining pandan leaves in the coconut milk pot. Keep using the ladle. until sugar dissolves Don't let the coconut milk become chunky. Wait until the coconut milk is boiling, then turn off the stove and set aside.
Step 6. Scoop the cooked glutinous rice into a mixing bowl, pour hot coconut milk into it, stir quickly, cover and let the glutinous rice smolder for another 15 minutes.
Step 7. Mix 3/4 cup of coconut milk, mixed with rice flour and salt. Bring to the fire and keep stirring. until the coconut milk thickens and boils to use as coconut milk for topping
Step 8. Scoop glutinous rice onto a plate. Topped with prepared coconut milk. Served with ripe mango
