Aunt — a double blessing. You love like a parent and act like a friend.~ Unknown
Such is my Aunt. I am blessed to have an Aunt like her, she is my husband's Aunt, automatically becomes my Aunt too. Yesterday, when I went to visit her, I paid attention to how she looked at my eldest son. Her eyes almost brawled - BUT - with pride and gladness. She stared at him while he shared lots of story and creating jokes. For your information, my Aunt babysat my eldest on his second day of life. That's why she is very closely knitted with his well-being. She commented that he has grown up a lot recently and has matured in his thinking and reasoning. She said it with good pride.
She also knew my youngest son is having health issues and she always think of him as well. Like what to cook for him and what not to cook. Almost every week, she asked of the wellbeing of family members, truly she always thought of others first. That was the reason she remained single to take care of her mom and siblings. Hearts her lot! She can be stern at times but that only meant she really cares.
Let's see what she cooked for us.
Yesterday, we arrived and the boys went, "Wahhhhh!" Because they spotted their favourite dish on the table. Look at the spread. Looks simple but let me elaborate.
Healthy Finger Food
These are homemade chicken breast nuggets and homemase fish fillets nuggets and also fried fresh prawns. And an omelette on top if you could spot. Whenever this dish was served, we knew she had put a lot of effort.
She usually bought chicken breast from markets, sliced them to thinner pieces, tenderized them with fork aka poke-poke many times to break the muscles fibre, made her own breas crumbs. Seasoned the chicken breast and pan fry.
She did the same to fish, bought whole fish, debone and seasoned then fry. Not sure whether can you see the fish fillets nuggets. Chicken breast nuggets on the right, fish one on the left, covered by the omelette.
Then there were many fried fresh prawns on the bottom left side of the photo. I zoom in for you. Super delicious.
Stir fry long beans
Then, a basic Chinese style vegetables stir fry. She used long beans this time, and added minced pork too. It is a simple cooking with onion and garlic oil, followed by soy sauce and oyster sauce as seasoning, as usual, when she cooked it, always flavourful. Super healthy too as she doesn't use alot of salt.
My eldest son wasn't a good eater when he was young. Trust me when I said this, he needed two hours to finish a meal. But at the age of nine, suddenly his appetite grew and could eat very fast and huge amount. I saw my Aunt's eyes filled with amazement whenever she saw him eat. She used to patiently fed him mouthful by mouthful for two hours.
The youngest son as usual, loved to roam here and there after eating, find for things to play or just trying to play with his grand aunt.
Before we left her place, she would want to pack for us to bring home for dinner. She always packed a lot that I had more than enough to share. Such is her loving kindness and generousity. So I aim to blog about my visit to her place weekly because I think my Aunt is worth to be documented into the blockchain.😍
