I hope that you've all be having a great weekend and that your coffee has been strong and delicious. It's a bit of a sad day for Lory and me, our neighbours are moving out. We're gonna miss them, they were very cool people. We made them a Banoffee Tart a few days ago as a gesture of gratitude for being awesome and as a treat after a long day of packing boxes. They loved it. You guys probably know by now that the accompanying guilty pleasure of mine that goes with my coffee is some form of sweet treat.
Cake, biscuit, tart, they are all welcome in my house (and mouth). I was saying a few days ago that what I lack in making our meals look pretty, I make up for in making desserts that taste really good. So this is a layered tart and it has bananas in it - which is a fruit - so it's at least partly healthy 🤣
First, if you have a kid, enlist their help. It will either make this process easier or an absolute nightmare depending on the variables involved and said kid. Either way, this is not dessert advice and I will not take responsibility for the little leprechauns running off with your ingredients.
What you'll need:
1 pack of coconut biscuits
1 box of readymade custard or 1 bowl of homemade custard
3 large bananas, peeled and sliced
1 tin of caramel treat
A few table spoons milk
250ml whipping cream
2 oreos or a flake chocolate (for sprinkles)
4 table spoons granulated sugar
Crush up enough coconut biscuits to make a substantial biscuit layer in the bottom of your dessert dish. You can put them in a bag and crush them with a rolling pin or do it manually in the dessert dish as Lory is demonstrating in the photo below.
Add a layer of custard. This is rather tricky and tends to be easier with warm home made custard than cold box custard. Find a way to spread the custard to make an even layer on top of the biscuits. I used the back of a large spoon to spread it but a spatula will also work.
Add a layer (or more depending on your preference) of banana slices. I cut mine about 5mm thick. Then mix the caramel treat with 2 to 3 tablespoons of milk to thin the consistancy. Spoon the caramel onto the banana layer and spread.
At this point you can layer up on whatever you have left so if you want more layers, then add more biscuits, custard, banana and caramel. Top off your layers with whipped cream.
Melt the granulated sugar in a pot on the stove top. Be very careful with this step as molten sugar can cause very serious burns. Please make sure that kids are well clear.
Once this is melted and dissolved, pour it over the back of a metal bowl and place it in the fridge to set. This will make a sugar sculpture for the topping of your tart. It looks fancy, but it's super easy to make.
Sprinkle the crushed/grated chocolate or oreo onto and voila - you've got a Banoffee Tart for Coffee or Tea time. Keep it refrigerated until ready to serve it.
