Bannoffee with your Coffee?

in #hive-1525243 years ago
Hello all my caffeine crusading friends

I hope that you've all be having a great weekend and that your coffee has been strong and delicious. It's a bit of a sad day for Lory and me, our neighbours are moving out. We're gonna miss them, they were very cool people. We made them a Banoffee Tart a few days ago as a gesture of gratitude for being awesome and as a treat after a long day of packing boxes. They loved it. You guys probably know by now that the accompanying guilty pleasure of mine that goes with my coffee is some form of sweet treat.

Cake, biscuit, tart, they are all welcome in my house (and mouth). I was saying a few days ago that what I lack in making our meals look pretty, I make up for in making desserts that taste really good. So this is a layered tart and it has bananas in it - which is a fruit - so it's at least partly healthy 🤣

First, if you have a kid, enlist their help. It will either make this process easier or an absolute nightmare depending on the variables involved and said kid. Either way, this is not dessert advice and I will not take responsibility for the little leprechauns running off with your ingredients.

What you'll need:

1 pack of coconut biscuits
1 box of readymade custard or 1 bowl of homemade custard
3 large bananas, peeled and sliced
1 tin of caramel treat
A few table spoons milk
250ml whipping cream
2 oreos or a flake chocolate (for sprinkles)
4 table spoons granulated sugar

Crush up enough coconut biscuits to make a substantial biscuit layer in the bottom of your dessert dish. You can put them in a bag and crush them with a rolling pin or do it manually in the dessert dish as Lory is demonstrating in the photo below.

Add a layer of custard. This is rather tricky and tends to be easier with warm home made custard than cold box custard. Find a way to spread the custard to make an even layer on top of the biscuits. I used the back of a large spoon to spread it but a spatula will also work.

Add a layer (or more depending on your preference) of banana slices. I cut mine about 5mm thick. Then mix the caramel treat with 2 to 3 tablespoons of milk to thin the consistancy. Spoon the caramel onto the banana layer and spread.

At this point you can layer up on whatever you have left so if you want more layers, then add more biscuits, custard, banana and caramel. Top off your layers with whipped cream.

Melt the granulated sugar in a pot on the stove top. Be very careful with this step as molten sugar can cause very serious burns. Please make sure that kids are well clear.

Once this is melted and dissolved, pour it over the back of a metal bowl and place it in the fridge to set. This will make a sugar sculpture for the topping of your tart. It looks fancy, but it's super easy to make.

Sprinkle the crushed/grated chocolate or oreo onto and voila - you've got a Banoffee Tart for Coffee or Tea time. Keep it refrigerated until ready to serve it.

Many thanks to the Cinnamon Cup Coffee community for letting me share my sweet treats and coffee adventures with you all.

Many thanks @qurator and @cinnccf 😃 I appreciate it.

You're very welcome!

Looks delicious, thanks for the recipe!

What a pity that your good neighbors are moving away. But that dessert looks delicious. I'll make a note of it for when we can eat desserts at home again. For now, as my husband is forbidden to eat salt and sugar, I'm avoiding temptations. And your helper looks like the best, by the way.

Hi @coquicoin

Thanks for the message, how was your weekend?

I'm glad you liked the recipe, it's totally worth a try when you can eat sweet stuff again.
Thank you, Lory loves helping in the kitchen and I enjoy teaching her, I'm hoping she will retain some of what she learns 😃

How are you guys doing?

Hi! The weekend is been quiet but it's not over around here yet. This week Monday and Tuesday are the Carnival holidays.

Lory is sure to retain what she has learned and cooking will surely be something she will enjoy because it will always bring back good memories of her childhood.

We are fine here, thank you, and have a great week! :)

YUMMY!! Andy maybe you should bring the cake and I will make the coffee?

This sounds like a good plan! I'm totally keen! Peppermint crisp tart for the win, I think you'll like it.

Haven't had one of those for years!

Thank you so much @cinnccf it's always nice to share these treats with everyone. Wish I could treat you all to some bannoffee in real life too.

Have a lovely weekend.

You're very welcome!
I guess we'll just keep dreaming of the bannoffee, till we give the recipe a go:)
It's the thought that counts, so thank you!

Hey Andy,

I don't make as much dessert and pastry as I would love to, but this one has all the ingredients that I absolutely love and it looks like it would be a pleasure to make.

It's actually good news hearing that you'll miss your neighbours, as I know that having a bad neighbour can change your life and views of it:(

The Bannoffee does look like something that little ones would love to help out within the kitchen, as long as you keep an eye on making sure that they don't eat off all the ingredients 😁

I especially love the oreo option for sprinkling, as it's about the only chocolate that I like.

It was a great idea to make two, as it would have been torture to create something so lovely with tasting it.

Thanks for sharing this awesome recipe with us.

Have a lovely Sunday:)

Hi Milly

Thanks so much for the message. We actually just came back from spending the last hour with the neighbours and saying goodbye. They were such salt of the earth people, real and authentically kind.

I'm not looking forward to the prospect of potentially snobby neighbours moving in afterwards, but let's hope not.

I think you would really enjoy this dessert, it is so good,it doesn't last long though, that's for sure. I would never be able to make such scrumptiousness and not have an extra bowl for us, that would be terrible lol.

The next dessert I make though is going to be the absolute highest of decadence - peppermint crisp tart. Lory is going to love layering that one.

Have a wonderful evening 😁

Peppermint crisp tart sounds aromatically delicious.
