Moinmoin is readily available as it can be easily prepared at home, gotten from restaurants and even available on the street.
The Ingredients used in preparing moinmoin vary and depend on the preference of the cook. They include and not limited to
Beans, Preferably white beans
Scotch bonnet pepper (Ata rodo)
Red bell pepper (tatashe)
Cayenne pepper (sombo)
Onion
Garlic
Ginger
Palm oil or vegetable oil
Egg
Sardine fish
Crayfish
Salt, Maggi and other seasonings
Ewe Iran (Thaumatococcus daniellii) or Banana leaves
- The beans is soaked in water and peeled immediately without allowing the to get fully soaked. If the beans get fully soaked, it might be difficult to get it peeled
- The peeled beans is then allowed to soak and soften in water for about 30mins to 1hr
- The three pepper varieties are then added in quantified portion as preferred by the cook
Onion, garlic and ginger are then added. The last 2 are optional as some people do not like them. - The whole combination is then blended thoroughly till its fluffy and velvety.
- The palm oil will be boiled and added to the mixture or vegetable oil. It depends on the choice of the cook. Personally, I prefer palm oil.
Seasonings, salt and Maggi are then added to it - The mixture will then be stared till its uniform.
- The mixture will then be put in the leaves in portions and each of our prepared fishes and boiled egg will be added to each portion and wrapped skillfully.
- Each wrap is then carefully arranged in the pot with some water added and allowed to be boiled for 30-45 mins and our food is ready
Aside the fact that it can be taken alone as a food, moinmoin can be served with lots of varieties which include and not limited to
Ogi (liquid pap)
Eko (solid pap)
Custard
Oat meal
Bread
Garri
Jollof, fried or white rice
- Moinmoin is very nutritious as it contains major nutritional food classes and can be taken with carbohydrates.
- Its very easy to make
- It is cheap to make because non essential ingredients can be exempted.
- If the leaf or the expertise to wrap the leaf is unavailable, nylon can be used to wrap it
Above all, its very tasty and delicious.
