Creative Sunday : My Delicious Curry Rice Recipe
Greetings dear hivers,I hope you all having a happy and relaxing Sunday, well my relaxing part just got started, as I just finished eating my delicious Sunday curry rice which I made immediately after I returned from church.

I have been craving this particular rice for days now but didn't have the time to make it, not that it is difficult to make, the ingredients are not even hard to come by, it's just that it's been really hectic with my job lately and there was already enough food to last for the week.
But today being Sunday makes the perfect day to satisfy my cravings, and above all, my children also like this curry rice and ate to their fill, having one picky eater daughter makes me very intentional about their food, as she eats with her eyes and nose before indulging or not, so I had to make this rice a bit colourful with the veggies I had available, you are free to add more available options of your choice.
Ingredients used
- Two cups of rice
- Plantain
- Curry powder
- Tomatoes
- Bell peppers
- Carrots
- Seasoning cubes
- onion
- Smoked fish
- groundnut oil
PROCESS*
- I made sure to wash and cut my tomatoes and other ingredients that needed dicing
After that, I put the pot on the cooker to get hot and added groundnut oil, note that the proportion you use depends on the measurement of the rice you are cooking.
I fried my already sliced plantain before cooking to make my cooking time short, then I went ahead to add the already sliced onion, followed by a sachet of curry powder which I allowed to fry for a few seconds
Next, I poured in the already-washed rice and added water to boil the rice
I also added seasoning cubes, salt, and pepper, then mix it well before covering the pot to let it boil.
- After about 30 minutes, the rice was already soft and the water almost dried up, so I went in with the smoked fish, carrot, and tomatoes, giving the rice a final mix then waiting a few minutes before putting off the gas.
My delicious curry rice is ready to eat and it was very filling, my daughters loved it so much they asked for a second round of eating at a go lol, and yes paired with a chilled glass of juice on a sunny Sunday makes the day perfect already.
