After a busy few days, I finally got some free time today and thought I’d do some cooking. I’m making a perfect summer vegetable today, known for its cooling properties. I’m making ridge gourd (tori). This post is related to the Sunday Creative Contest by #HiveLearners. This is a very simple recipe. So lets start making:
Ingredients:
4 medium-sized ridge gourds (peeled and chopped)
2 medium onions (finely chopped)
1 tomato (finely chopped)
2 green chilies (slit)
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin seeds
1/2 tsp dry garam masala
Salt to taste
2 tbsp oil
Fresh coriander leaves (chopped, for garnish)
Preparation:
Peel the ridge gourds and chop them into small pieces.
Finely chop the onions and tomatoes. Slit the green chilies.
Heat oil in a pan over medium heat. Add cumin seeds.
Add the finely chopped onions and slit green chilies. Sauté until the onions turn golden brown.
Add the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and mushy.
Add turmeric powder, red chili powder, and coriander powder. Mix well and cook for 2-3 minutes until the oil starts to separate from the masala.
Add the chopped ridge gourd pieces to the pan. Mix well to coat the pieces with the masala.
Add salt to taste and cover the pan. Let it cook on low to medium heat for about 10-15 minutes, stirring occasionally, until the ridge gourd is tender and cooked through.
Once the ridge gourd is cooked, add garam masala and mix well. Cook for another 2 minutes and turn off the heat.
Garnish with freshly chopped coriander leaves.
First, heat 2 tablespoons of oil in a pan until hot. Add whole spices, then add chopped onions and fry them well.
Now, add ginger-garlic paste and green chili paste to it and cook for a while.
Now, add tomato paste to it and cook. Adding tomato paste will give it a nice texture and gravy.
Now, add the peeled ridge gourd pieces to it and mix well with the spices for a while in the pan, ensuring they are coated evenly.
If needed, you can add a little water here. However, do not add too much water because vegetables will release their own moisture.
Now, cover the pan and let it cook on medium flame for 10 minutes.
Now, remove the lid from the pan and let it cook uncovered on low heat for 2 minutes.
I have some fresh green coriander here. Add it to the pan.
The delicious ridge gourd masala is ready. Serve it with roti.
