Somehow it's been a norm in Nigerian homes to take bean cakes (Akara) and pap every Saturday morning, I don't know who exactly made these rules or whether it's even written anywhere but over time it's been confirmed.
To some they take it because they don't go to work on Saturdays so enough time to prepare, while other thinks it's a heavy meal which may make them sleep off in school or at work. So on weekdays they stick with their bread and tea which they can prepare in 2 minutes, while on Saturdays it's Akara and Pap all the way.
For me I take it at anytime of the week I want, but preferably on Saturdays because of the above stated reasons. Akara goes well with pap or custard, and even with bread and that's such an amazing combo.
Over here in school, I make mine with the already processed bean flour specially made by my mum just for me. It makes it easier and quicker for me instead of going through the process of peeling and washing beans, to grinding, mixing etc.
Ingredients used for making bean cakes(Akara).
- Bean flour
- Salt to taste
- Ball of onions
- Fresh pepper
- Oil to deep fry
Steps on how to prepare Akara.
- I scooped 5 table spoons of the bean flour
- Next I added the chopped onions, pepper, salt to taste and added water to get a nice consistency.
- By then it was sticky so I mixed well, so that the the mixture is even more like in paste now.
- I added oil to my frying pan, allowed it to get very hot then began to mould in the akara balls into it.
- Then I stir to the other side when it was light brown, and then drained it with my kitchen towel.
I quickly made my custard as that's what I prefer to go with it, sat down and made sure the fan is blowing directly into my head and enjoyed my amazing breakfast.
I didn't know I'll be writing this post so I didn't take the step by step pictures of it, I'll definitely do so next time so please pardon me guys.
