Huge Salzburger Nockerln

We fell in love with Salzburg when we visited as a family in spring, so we decided to spend our Christmas holiday there as well.

One of my personal goals this time was to finally try Salzburger Nockerln, a famous dessert from Salzburg that I missed last time because we were just too full. At least, that was my goal 😁

Salzburger Nockerln is a soufflé-like dessert made from baked meringue with a little flour added. Its eye-catching shape symbolizes the mountains of Salzburg, topped with powdered sugar to resemble snow—just like Salzburg in winter!

I heard that Café Sacher, at the famous Hotel Sacher for its Sachertorte, serves it, so we stopped by a few times. However, the line always stretched outside the café, and waiting even inside in subzero temperatures felt daunting. And then the final day of our stay came. I really wanted to taste it!

After checking out of our hotel, we went to see Café Sacher and found only four groups ahead of us. A sign next to the line said a wait time of about 15 minutes, so we happily decided to stay. Breakfast had been light and early, so I was perfectly ready to indulge.

While waiting, we were entertained by the beautiful display of cakes. Their signature Sachertorte looked delicious, and there was also Apfelstrudel, which I adore. But this time, I was committed to Nockerln—definitely Nockerln.

Initially, I thought the Nockerln could be shared among the family, but everyone wanted to order their own thing. My daughter chose hot chocolate and lemon cake, my partner went for goulash soup, and I ordered the Salzburger Nockerln with an espresso. Since I was planning to write about Nockerl on Hive Blog, I offered to invite my family ... the bill was ... but hey—it’s Christmas ☺️

From my research, I knew the Nockerln would take about 20 minutes to bake, and I was a bit nervous about whether it would arrive on time with our train schedule looming. Thankfully, service was efficient, and it came out smoothly. To my surprise, the Nockerln was enormous, much larger than I had imagined. It was brought on a cart, and even the neighboring tables went “wow.”

A server dressed in traditional dress explained that the three peaks represent Kapuzinerberg, Gaisberg, and Mönchsberg. Haha, it was massive!

By the time we finished, we were super full. I’d recommend sharing this with 5–6 adults! According to my partner, Salzburger Nockerl is more of a tourist treat than something locals usually eat. I was smiling to see other tourist families ordering it like us.

I found a recipe online and might try making a mini version at home someday.

Austria is a country I deeply love, having spent about a year there as a visiting researcher during my PhD program and visiting several times since for work and research.

I hope to spend another holiday in Austria soon—next time, I’ll go for my all-time favorite, Apfelstrudel.

春に家族でオーストリアのザルツブルクを訪れてとても気に入り、クリスマス休暇もザルツブルクで過ごすことにしました。

前回お腹がいっぱいで果たせなかったザルツブルクの名物スイーツ、ノッケルン(Salzburger Nockerln)を食べるのも目的の一つです・・・少なくとも私は 😁 ノッケルンは、小麦粉の入ったメレンゲを焼き上げたスフレのようなお菓子です。目をひく形は、ザルツブルクの山を象徴していて、雪に見立てた粉砂糖がかかっています。まさに今のザルツブルク!

ザッハトルテで有名なホテルザッハーのカフェでも食べられるとのことで、何度か覗いてみたものの行列がカフェの外まではみ出ていて、マイナス気温の中、並ぶのは気が引けて、最終日になってしまいました。食べたいよー・・・

ホテルをチェックアウトして荷物を預けて、またホテルザッハーのカフェを覗きに行くと、待っているのは4組。行列の横の看板には15分程で席につけるとのことで、大喜びで並んで待つことにしました。朝ごはんは早めに控えめに食べていたのでお腹がいい感じに減っています。

待っている横にはケーキがディスプレイしてあって、ケーキを見ながら楽しく待てました。名物のザッハトルテもおいしそう、大好きなアプフェルシュトゥルーデルもある・・・でも今回はノッケルン。絶対ノッケルン。

ノッケルンを家族みんなで分ければいいかなと思っていたら、それぞれ注文したいものがあるとのことで、子供はホットチョコレートとレモンケーキ、相方はグーラッシュスープを注文して、私はノッケルンとエスプレッソにしました。Hive Blogに書くし私が出すよと言ったけれど、結構なお値段に・・・ 😅 クリスマスだしよしとしましょう。

事前調査によるとノッケルンは焼き上がるまでに20分ほどかかるようで、混んでいる中、電車の時間までに出てくるかドキドキでしたが、スムーズに出てきました。よかった。写真ではなかなか伝わりにくいのですが、ごろごろカートに乗って運ばれてきたノッケルンは思っていた以上に巨大でした。

隣のテーブルのお客さんもおおーとなる中、伝統衣装の店員さんが、Kapuzinerberg(カプツィーナ山)、Gaisberg(ガイス山)、Mönchsberg(ミュンヒス山)なんですよーと説明しながら切り分けてくれました。でかい。

食べ終わる頃にはお腹がぱっつんぱっつんで、多分、5−6人くらいで分けるのがちょうどよいと思います。相方によると、地元の人が食べるものというよりも、観光客向けとのことで、観光できているなという家族が注文しているのが微笑ましかったです。

家で作れるようにレシピが公開されていたので、いつか自分でミニバージョンを焼いてみたいです。

I never knew about this dessert, and it looks so cool they resemble the mountains.
I wonder if I can get this dessert outside Austria.. hmmm that would be awesome! 食べたいです。。。

It looks like an Angel cake that my husband used to make when we visited the USA. It was a family cake for gatherings. Since his parents have passed away, we haven't traveled to the USA. As soon as I saw your photo, it brought back those memories. Merry Christmas! :)
