My weekend culinary try out.

This weekend I wanted to do something different from the usuals. I had a bit of free time this weekend and so I decided to use that time to advance my kitchen skills.

I decided to prepare a western Nigerian delicacy popularly called efo riro. This is a delicious soup consisting mostly of leaves and the taste is really great.

For this dish, I used the following ingredients.

  1. African spinach leaves
  2. Smoked fish
  3. Onions
  4. Palm oil
  5. Cow skin
  6. Chicken
  7. Seasoning cube
  8. Tomatoes and pepper
  9. Crayfish
  10. salt

How to prepare the soup

I placed a clean pot on the stove and alloeed it to get heated up and devoid of moisture. Next I poured in the palm oil about two spoonfuls and I left it to get heated as well. Then I added in the onions and stirred it for a while before adding the blended tomatoes and pepper and continued stirring. When It was cooked a little,

I added the crayfish and smoked fish including the cow skin.i continued frying the combination making sure that it does not get burnt. I then added a little water into the pot, stirred the pot and mixed everything properly. I covered the pot allowing the ingredients to cook and combine properly. After about ten minutes, I added the leaves into the pot, stirred and covered the pot to allow the ingredients infuse into the leaves.

After ten minutes, the soup is ready. It's aroma was just so enticing, yummy.

You can eat it with rice,yam or swallow (cassava pudding).
