The existence of good quality organic coconut sugar production is decreasing. This is influenced by many factors, one of which is the decrease in coconut sap tappers. The sap that comes from the coconut tree is the only basic ingredient for making coconut sugar. The process of tapping sap is still carried out in the traditional way, namely by manually climbing a coconut tree and then slicing the coconut flower (manggar) with a sickle.
In an average coconut tree there are two or three flowers that can be tapped to produce sap. One tapper coconut flower gets about 0.5 liters, so one coconut tree can produce 1 to 2 liters of pure sap. The time needed to produce this amount of juice with good quality is about 8 to 12 hours, more than 12 hours the quality of the juice is not good anymore. So the tappers have to climb the coconut tree twice within 24 hours to produce good sap.
The nira tappers inevitably have to climb a coconut tree to take the tap twice a day so that the hira produced is good and of high quality, even though the coconut trees that are climbed manually vary in height. Coconut trees begin to flower with an average height of more than 1 meter, during the non-production period they reach a height of more than 10 meters. You can imagine how hard the efforts made by the tapper in a day and night have to climb a coconut tree twice, especially if there is bad weather, heavy rain accompanied by wind.
When the weather is bad, nira tappers have difficulty climbing coconut trees, the risk of accidents is high. Falling from a coconut tree can cause permanent physical disability and even death.
