Greetings Hive friends. I hope you are all doing well. Though it has only been 2 weeks of being inactive on Hive, it feels like an eternity lol. So much has happened in the past 2 weeks.

More than a week ago we picked up a good friend from Belgium at the airport who is staying with us for a few weeks. He has Cambodian roots but funny enough he has never visited his home country before.

His parents and eldest brother fled the country under the Khmer Rouge regime and they have been living in Belgium ever since. So our friend was born and raised in Belgium. Since we told him that we are almost leaving he decided to finally visit the country of his family.

My husband grew up with him and they have been friends since they were 2 years old. The first week has been pretty funny showing him around in his own home country. So you can imagine that time for Hive is pretty limited these days.

Today, however, I finally found some spare time as it is too hot to move right now. Going to the swimming pool later, but for now, we are enjoying the coolness of our house and a refreshing glass of Kombucha.

Earlier this morning I made blueberry chia breakfast pudding for everyone! A refreshing and nutritious start to the day. Though they come at a hefty price, I am so happy we can finally find organic strawberries and blueberries here in Cambodia.

In the 8 years we have been living here, it is the one thing I miss from Europe. Apart from friends and family of course. But soon I will have a chance to meet up with them too. Exciting times. I just booked a flight to Belgium to go celebrate the 70th birthday of my dad… though I told him so it’s not a surprise visit, he told me it is the best present I could give him.

Though it will only be a short 10-day visit, I am so looking forward to seeing my family. Due to covid, it has been 3 years I haven’t been able to give them and hug and spend real life time with them.

Though moving to South America is still our dream (and it will happen at some point), since we decided to make a stop in Portugal first for a few years, I will be seeing my family more often. Portugal is only a 2-hour flight away from Belgium.

But enough about me and missing my family. I guess I got a bit carried away by having a long-time friend staying with us. It made me realize how much I have missed my family and friends the past years. Though I must say I will miss many of my friends here in Cambodia too. But c’est la vie!

Let’s talk chia seed pudding now!

BLUEBERRY CHIA SEED BREAKFAST PUDDING

Chia seeds can absorb up to 12 times their weight in water. When they do, they swell in size and take on a gelatinous texture, making them an excellent substance to make jams, jelly, and puddings.

INGREDIENTS (SERVES 4)


For the pudding


  • 2 cups organic unsweetened almond milk
  • 1 cup fresh blueberries
  • 2 tbsp maple syrup (or to taste)
  • Β½ cup chia seeds
  • Splash of lime
  • Pinch of Himalayan pink salt
  • Vanilla extra (optional), to taste

Toppings


  • Fresh blueberries
  • Fresh strawberries
  • Almond flakes, toasted
  • Desiccated coconut

DIRECTIONS


Add all pudding ingredients to a blender and blend until homogeneous. Let sit for 10-15 minutes until slightly thickens and mix again with a fork.

Optional: cut strawberries into thin slices and stick them to the inside of your jar.

Divide the slightly set chia seed pudding into the jars. Let set in the fridge for a few hours. Overnight is best.

In the morning, take out the jars and top them with your favorite toppings. I used extra blue=berries, strawberries, toasted almonds, and desiccated coconut.

Yum!!! And I'm glad I clicked on this post; I loved hearing about Cambodia! I'm fascinated by what drives people to live in countries with cultures so different to their own. I lived on Bali for 15 months and adored it. I learned so much and grew so much. But my reason had more to do with "my intuiton told me to".

I'm curious, Amy, what lead you to move to Cambodia 8 years ago? And what was your favourite thing/s about it? (and where did you live??)

Thank you! Bali must be pretty awesome too. A little over 8 years ago we were ready to move to South America, but then we took one last holiday to SE-Asia to visit the country of our good friend (the same who is visiting us right now) and we kinda got stuck here lol.

What I love about Cambodia is the super friendly people, the climate, and the sense of freedom we have here. Not too many rules or people telling you what to do. Before I would have added its beautiful nature and vast jungles to that list too but unfortunately they are destroying everything to give rise to ugly high rises and massive roads funded by Chinese investments.

So 8 years is enough now... ready for the next adventure. But we are definitely not going back to Belgium that's for sure lol.

Ahhhhh, thanks for responding Amy. You've inspired me to return to Cambodia. I visited with an Intrepid Tour group in my early 20's (eeek, almost 20 years ago!) and found it very confronting. I think we were just smashed with too many of the problems instead of getting a chance to see the beauty of the people and the place. I shall add it back onto my "return to" list. Thank you! (Though bummer about all the destruction of the natural environment! I guess that's possibly happening in many more countries around the world than we'd like... Motivates me to make more money so I have more influence and power to create education and change on things such as this!)

Not going back to Belgium! Aha! I've never been, so I shall! Then... maybe I'll know what you're talking about πŸ˜… Though maybe you're just naturally a warmth-lover? In which case I imagine you'll move to somewhere in the northern half of South America? Have you worked it out yet? Ecuador??

Belgium is actually quite beautiful and has lovely food, but so many rules and soooo cold lol. If you ever go, visit Ghent. Super nice there.

If you want to visit Cambodia again, don't wait too long. As mentioned Cambodia is losing all its beauty at a fast rate. As for S-America somewhere in the Andes. Ecuador is def on the list.

I hope you make enough money soon to create education on how to protect our planet. I would love to volunteer in wildlife conservation myself. But just like you, I need more money to be able to spend my days on that.

That's exciting thinking of a wonderful reunion with your family. They must be also excited.
I know what it's like to not know my original home. I was in Bangkok for the first time after 26 years and needed guiding around. In your friends case he had never been there so it must have been a shock and inspirational at the same time.

You just reminded me of how awesome chia is and now that strawberries actually taste good, I am going to get some chi and have breakfast ready for tomorrow. Yum! The possibilities are endless with chia.

Haha... my mom is overexcited lol. To be honest I am too! At what age did you leave Thailand. Do you still have lots of memories of it or were you too young? My friend is having an amazing time. Though it's a bit weird at times. Soon he will travel north to go see family he has never met but his parents gave him kind of an address so he is going to look for them. I can't wait to hear how that went. Have a healthy and happy day πŸ’š
