Happy Sunday Funday Hive! Usually, on Sundays, we like to go for a swim with friends. However, today we decided to stay home as many of our friends are sick and might have caught the omicron virus.
To be fair staying home this Sunday might not be such a bad idea as we have so much work to do. In the end, after a month of giving them the time to think, our friends decided that owning their own business in Cambodia scares them too much so they have decided not to buy our bakery.
Though I actually saw it coming as they're not the most business-minded people, and the bakery is so ready for expansion, I was kinda hoping they would say yes to this opportunity so we didn’t have to go through all the hassle of finding a buyer… but it is what it is and I am sure we will find one soon as it is quite a successful little business we have.
Even during the past 2 covid years, we were able to grow our little project and is now ready to take it to the next level and expand. Unfortunately, Cambodia no longer feels like home so we have to do what we have to do and move on.
So today will be spent putting all the numbers from the past few years on paper, making an inventory, and much more. Not something I like doing and was looking forward to.
To give me an extra push and some energy, I quickly made some power balls this morning to give me the energy I need to stay focussed while handling these numbers and very boring tasks. Plus it is super hot today. I hate doing numbers when it's so hot. But @riverflows just gave me the idea for making a batch of iced tea.
After making the power balls, another little excuse to not start doing the numbers right now... Iced tea is cooling down, so now I have a little time for this quick hive post... after this post, however, I promised myself to finally start putting this sales file together :)
NO-BAKE HEMP POWER BALLS (GLUTEN- AND SUGAR-FREE)
Also known as energy balls, bliss balls, or energy bites, power balls are the ultimate healthy treat. They are gluten-free, sugar-free, and packed with good-for-you ingredients.
Plus, they only take a few minutes to throw together, making them a fantastic quick, easy, portable breakfast or snack on the go!
Ingredients (15-20 balls)
1½ tbsp extra virgin coconut oil
1 cup dates
3 tbsp hulled hemp seeds
¾ cup pecans, roasted
½-1 tsp cinnamon powder
2 tbsp cacao powder
Desiccated coconut oil to coat
Directions
Soak dates in boiled water for at least 10 minutes, Drain and remove the pit.
In the oven or a dry pan, roast/toast pecans. Allow to cool before adding them to a blender. Ground until you have a coarse texture.
Add all ingredients except the desiccated coconut to a blender and process until the dough comes together and no big pieces of the dates remain.
Portion the dough into balls of the desired size. Toss balls in a bowl with desiccated coconut until nicely coated.
Enjoy immediately or add the fridge to firm up.
Leftover power balls can be stored in an airtight container in the fridge for up to 2 weeks. But I am pretty sure they won’t last that long
