My plant-based take on an old-fashioned classic. These gluten-free, crumbly date squares are perfect for any occasion and will please even the pickiest of eaters.
They are so good, they'll make you forget all about the monsoon season. And that's saying something because the monsoon season this year is wild. For almost 2 weeks the rain has been coming down so hard.
But don't worry, these squares will lighten up your day. So next time you're feeling down about the weather, just remember these squares are waiting for you. They're the perfect pick-me-up on a rainy day.
Anyway, enough about the weather. Let's talk about this delicious little snack or dessert! They're made with dates, which are basically nature's candy. And they're 100% plant-based and gluten-free.

STICKY DATE CRUMBLE SQUARES (VEGAN AND GLUTEN-FREE)
INGREDIENTS
For the sticky date filling
- 2 cups dates, packed and pitted (about 350g)
- 1 cup water
- 2 tablespoons lemon or lime juice
- ½ teaspoon vanilla extract
- 1 teaspoon baking soda
For the crumble
- 1⅔ cups rolled oats (or 170g)
- 1⅓ cups almond flour (or 155g)
- ¼ cup + 2 tablespoons brown cane sugar (about 80g)
- 1 teaspoon cinnamon powder
- ¼ teaspoon baking powder
- Pinch of Himalayan pink salt
- 1 cup coconut oil (or 150g)
- ½ cup chopped nuts of your liking chopped (I used almonds)
DIRECTIONS
Roughly chop up the dates.
Add all filling ingredients except baking soda to a saucepan. Bring to a boil, stirring regularly to break up the dates.
Once the mixture is boiling, add the baking soda and stir the mixture for about 4 to 6 minutes until you get a sticky date paste.
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Line a baking dish with parchment paper.
To make the crumble, add all crumble ingredients except coconut oil and nuts to a mixing bowl. Mix well, then add the coconut oil. Using your hands or a fork, mix until you have a sandy dough.
Press half of the crumble mixture into the prepared baking dish and add the sticky date filling on top.
Using your hands, incorporate the chopped nuts into the other half of the crumble mixture.
Crumble the mixture onto the date filling. Lightly press it into the filling.
Bake in the preheated oven for 35-40 minutes, or until the crumble is golden brown.
Allow to cool completely before cutting into squares.
