I love air-fryer sweet potatoes. A tender texture, and also slightly creamy on the flesh, and has a beautiful fresh fragrance from the roasted process. In my opinion, I prefer it compared to the taste of potatoes which tend to be bland. Especially for diets.
In the past, when I was on a diet, I consumed sweet potatoes as a substitute for rice. Sometimes, for a snack. It really helps me to get a healthier variety of carbs.
Indeed, for some moments, potatoes are the winner. However, in my area, sweet potatoes tend to be cheap and easy to cultivate. In fact, we can cook the sweet potato leaves with the stir-fry method. That's why sweet potatoes are always a winner in my heart.
Currently, I am no longer on a diet. My weight is normal. But I still often eat sweet potatoes for dinner. That's because I think sweet potatoes dishes are lighter than rice. Even though I often eat rice. I take turns consuming both of them so I don't get bored. The thing you need to pay attention to is the portion, don't overdo it.
So, for this time, I will share a light dinner menu with sweet potato ingredients. Also, with snow peas whose crunchy texture I really like! Also, the taste is delicious even if served simply with garlic seasoning.
For protein intake, it just so happened that I was out of stock of tofu and also tempeh. So, I use cashews which also contain protein. You can replace it with a bigger protein source if you have a stock of these ingredients at home. Just adjust to your stock at home.
AIR FRYER SWEET POTATOES
You can also roast or bake sweet potatoes in an oven if you don't have an air fryer. Here, we just need enough oil and enough salt to toast the sweet potatoes well before roasting.
I like to add a little salt because it makes the sweet potatoes taste even more delicious. There is a unique characteristic taste when the sweet taste of sweet potatoes combines with the savory taste of salt.

Clean the sweet potatoes without needing to peel the sweet potatoes. Then, prepare a fork, and pierce the sweet potatoes using a fork.
toast sweet potatoes with oil and salt
Use a food brush to coat the entire surface of the skewered sweet potatoes. After coating with salt, sprinkle the sweet potatoes with a little salt.

Previously, preheat an air-fryer or oven. Then, bake for 20 minutes per side. If you use large sweet potatoes, then use 25 minutes per side. Or, you can check the sweet potatoes with a toothpick to ensure their doneness.
STIR FRIED SNOW PEAS
Sweet potatoes are still in the baking process. Then, I prepared side dishes to save time. I have a supply of vegetables in the form of snow peas, also carrots.
So, here are the side dishes ingredients, with garlic seasoning:
- 1/2 cup of snow peas
- 1/4 cup of cashews
- 1 carrot
- 3 cloves of garlic, finely chopped
- 1/2 teaspoon of salt
- (optional) sprinkle of sugar
prepare veggies
Discard the right and left parts of the snow peas. Usually, I use scissors to remove the ends of the snow peas, this makes my work faster compared to using a knife.
For carrots, finely chop to create small shapes. I used this shape because these carrots will be served with baked sweet potatoes. This will make it easier for the carrots to be consumed in bite-size.

After preparing all the vegetables, then finely chop garlic. This way can be good for adding flavorful to the stir-fried vegetables later.

First, we need to preheat about 2 tablespoons of cooking oil. Then, add chopped garlic. Be sure to cook in a small fire. This way will make the chopped garlic soak in the oil. Creates a great taste in all vegetables even without additional chemical flavoring powder. Just garlic is enough to make veggies taste good.

Add all vegetables. Stir well until they combine well. Then, add 1/4 cup of water also salt, and sprinkle of sugar.
Raise the heat to medium heat. Then, add cashews. Stir-fry for about 5 minutes in a cover. After five minutes, open a cover, and remove.
SERVING
Remove the baked sweet potatoes from an air fryer. Then, split the sweet potatoes into two parts to make it easier to enjoy dinner.
Add stir-fried vegetables on top of baked sweet potatoes. Here, I also added spicy chili sauce to a serving plate. You can also add any of your favorite sauces.
