Fried snacks can always make us crave. Sometimes we are not strong enough to avoid fried snacks. What we can do is reduce the portion we eat, and also make our own fried snacks at home.
Making fried snacks at home can be one way for us to be healthier. That's because we can control the type of oil used, as well as the flour ingredient used to mix the fried snack mixture.
Out there, at the street food vendors, especially in my area, there are many sellers who use oil repeatedly for frying. This will have a serious impact on our health. So it's better to make it at home if we really crave fried foods.
FRIED EGGPLANT
I'm really craving fried eggplant this time. It was actually my fault. I always postpone making side dishes from eggplant. In the end it makes me tempted to make fried eggplant every time I open the refrigerator 🤣🤣🤣
So, this time, I will make fried eggplant. With the simplest method and the simplest ingredients.
Actually, fried eggplant already tastes good with any addition. But we need a slightly crispy sensation on the surface of the eggplant slices. That's why there are many variations of recipes that add flour, eggs, and breadcrumbs. Honestly, I hate flour coatings especially those that use all-purpose flour.
I will use maizena flour / corn flour instead of all purpose flour. I also don't use breadcrumbs.
THE BIG IMPACT OF CORIANDER POWDER
Maybe you are more familiar with garlic powder. In Indonesian cooking, we often use coriander powder. For example, to season tempeh and tofu.
This time, I will also use coriander powder which will have a big impact on the taste of fried eggplant.
THE INGREDIENTS
- 2 long eggplants, or one big eggplant
- 1/2 cup of cornstarch flour / maizena
- 1 teaspoon of coriander powder
- 1/2 teaspoon of salt
- (optional) 1/4 teaspoon of turmeric powder
- 1 tablespoon of salt for soaking eggplant pieces
COOKING INSTRUCTIONS
Cut the eggplant at an angle so that the eggplant cut is oval in shape.
Soak eggplant pieces in water with a teaspoon of salt added. 5-15 minutes.
Prepare the corn flour mixture. Add coriander powder, turmeric powder and salt into corn flour. Then mix well.
Heat the oil. Then prepare the eggplant pieces. Make sure the eggplant pieces have been drained. Do a slight squeezing movement to release the water content in the eggplant pieces. Add eggplant pieces into the corn flour mixture.
Fry eggplant pieces until golden brown. Remove and let sit for a moment to drain the oil.
SERVED
Serve fried eggplant with your favorite sauce. I served those fried eggplant pieces with spicy sauce and sesame seeds. Also, some celery leaves as garnishes.
In fact, I also fry eggplant with the air-fryer method. To compare the two.
Unfortunately, with the air-fryer method still there are a few flour crumbs that look undercooked. But the inside of the eggplant is already soft. Even so, it still tasted good and I finished it 🤣. It's just that I didn't take a photo. Next time, I'll just do the air-fryer method with no added corn flour, or I need to experiment more about the timing process.😊
