This may sound simple but I only recently realized it. Maybe the same thing happened to you. The more we try to get used to healthy foods, the less time we spend cooking. Because we are actually preparing food that is less processed and free from additional flavorings.
For example, by frying using a lot of oil, we will spend more time than just stir-frying. Then, to make cakes with a lot of flour we have to spend a lot of time kneading and so on.
I then realized that to live healthier we will actually prepare simpler food that does not take much time. In addition, since deciding to eat healthier food, my money has become more economical because I no longer look at fast food, as well as snacks in the market which are indeed quite expensive.
For daily food, I am trying to reduce fried foods. Usually I focus more on steamed or stir-fried foods. Like what I will share with you this time. A simple recipe but one of my and my husband's favorite side dishes at home.
Stir-fried broccoli with garlic and mushroom flavor. We can add any variation of vegetables, such as carrots or peas.
The mushrooms I use are really cute! Brown shimeji mushrooms. I also often use the white shimeji mushroom version in my cooking. Of course, you can use any type of mushrooms that are available in your area, and that are suitable for stir-fried dishes with broth.
Here, I also use mushroom seasoning powder that I found in the market. I am very happy to find this product, from one of the trusted brands in my country. You can use mushroom broth.
THE INGREDIENTS
- 350 grams of broccoli
- 250 grams of mushrooms
- 200 grams of carrots
- 2 cups of water
seasoning
- 7 cloves of garlic, finely chopped
- 1 teaspoon of mushroom powder
- 1 teaspoon of ground pepper
- 1/2 teaspoon of salt
- sprinkle of sugar
- 1 tablespoon of cornstarch mixed with 1/4 cup of water
COOKING INSTRUCTIONS
Step 1
Prepare the vegetables to be used. Cut the broccoli, carrots, and mushrooms. For broccoli, I usually soak the broccoli in salt water for a while to remove the small worms that usually hide in the broccoli.
Step 2
Finely chop the garlic. Also, thinly slice the ginger lengthwise, but you can also just crush the ginger.
Step 3
Prepare a cooking pot. Heat a little oil. Then, saute the chopped garlic and sliced ginger. Keep stirring for a while.
Step 4
Add all the vegetables. Saute for a while. Then, add salt, sugar, ground pepper, and mushroom powder. Stir them evenly.
Step 5
Add 2 cups of water. Then cook them for 5-7 minutes depending on the texture of the vegetables you want.
Cook with a lid so that the vegetables can cook evenly.
Step 6
Just before removing from heat, add the cornstarch solution. This aims to make the gravy thicker. Cook briefly until the sauce thickens. Then lift.
SERVING
Serve broccoli with garlic and mushroom seasoning while warm. This time, I served this side dish with steamed rice. For lunch also dinner.
The dish I made was enough for 4 servings. So, I cooked for me and for my husband. For lunch and dinner. 😊
I like the thick sauce with mushroom seasoning that is very pronounced, rich in flavor! Mushrooms and broccoli are like good friends. ❤️
