One plate filled with various types of vegetables. I like the diversity that unites into a gastronomic beauty on a serving plate. Also, don't forget the nutrition of the various ingredients on the plate.
When shopping for veggies some time ago, I couldn't think about what menus to make. But when I immediately acted in the kitchen, I stared at the various ingredients for a long time. Miraculously I like getting inspiration to process these foods.
The people around me, they recognized that my food looked unique. At first, they were always curious about the shape of the food I served. But over time they got used to it and didn't ask anymore. They will immediately eat the food I make. I am pleased that my family members have believed in my cooking. It makes me excited to try many new creations because there are already people who are ready to try my new menu.
So what's for dinner today? I will serve garlic butter asparagus served with air fryer sweet potato and spicy tempeh patty. Indeed, efforts are needed to prepare a type of dish that has various ingredients. But it will all pay off satisfyingly with the taste. No wonder, many fine dining restaurants serve pricey food but with stunning presentations!
All We Need
I use 2 sweet potatoes; 200 grams of asparagus; 2 tablespoons chopped garlic; 3 tablespoons of plant-based butter; enough cooking oil and salt.
For the sauce, I use instant curry paste which I cook until it simmers with coconut milk. If you don't have all that, you can use a substitute sauce. My advice, peanut butter sauce or tahini sauce is the best substitute.
Making Air Fryer Sweet Potatoes
I made an air fryer sweet potato first to save time. Don't forget to preheat the air fryer. Well, you can also use the oven for baked sweet potatoes.
Cut and Wash Sweet Potatoes.
Cut the sweet potatoes without peeling them. Then wash them. I used dishwashing detergent to clean the dirt off the sweet potatoes.
Then drain them and dry them with a napkin or paper towel. As much as possible there is no water left because we will coat the sweet potatoes with oil.
Prick Sweet Potatoes Using a Fork.
After cleaning the sweet potatoes, prick them with a fork. Do this on all sides of the sweet potatoes.
Cover Sweet Potatoes With Oil.
Cover sweet potatoes (that have been prick) with oil. Then sprinkle with salt to taste and level them well.
Bake Sweet Potatoes.
Bake sweet potatoes for about 25 minutes for each side. I turn the other side over and bake them again so they are perfectly cooked on the whole side.
Garlic Butter Asparagus
Asparagus is not a familiar vegetable in my area. I have to buy asparagus in the capital if I want to eat these nutritious vegetables. So it's only natural that I think of asparagus as a precious vegetable.
Also, I treat asparagus with great care. I don't think I want to hurt my hard-earned asparagus. Well, as do many things in life. What we get with difficulty will surely be cared for and appreciated wholeheartedly, right?
Remove Few Stems of Asparagus.
I will be peeling asparagus stalks using a potato peeler. So I'm just going to remove a few asparagus stalks on the bottom.
Peel Aspragus Skin.
To make the job easier, I use a potato peeler instead of a knife to peel the asparagus. Do it carefully and patiently so that not a lot of asparagus flesh is wasted.
Blanch Asparagus.
After washing the asparagus, then boil the water. Add to taste salt. Then blanch the asparagus for about 3 minutes or according to your cooking style. Then drain, and set aside.
Melt The Margarine.
Melted vegan butter. You can melt the butter before using the air fryer or oven that you use to bake sweet potatoes.
Stir-fry Chopped Garlic.
Stir-fry Asparagus.
Add asparagus. Stir well for a few minutes until it looks like asparagus is covered well with margarine and butter. The texture of the maturity is adjusted to your individual tastes.
Making Creamy Sauce.
For the sauce, I use curry flavor as I mentioned before. I mix instant curry paste with thick coconut milk for a creamy texture.
Presentation
Prepare all cooked dishes. Also, the sauce that has been prepared. For the sauce flavor, it is your choice. You can also use spicy flavor using chili paste if you like spicy.
First, place the asparagus garlic butter neatly. For a beautiful asparagus shape, I put the asparagus stalks one by one on a serving plate. Then I added garlic to form a visual tie to the bouquet. It looks similar.
Then prepare baked sweet potatoes. Take a sweet potato. Slice the sweet potato in the middle using a knife. Don't get it split in two. Hold the top and bottom of the sweet potato to open the sliced edges with a knife. Then, scoop the inside of the sweet potato to make it easier to eat later. Serve side by side with asparagus. Sprinkle them wit sesame seeds if you want it.
For the patties, I used tempeh patties which I don't show here how to make them. That's because I had leftover tempeh and decided to serve it with the asparagus dish this time.
You can use other accompaniments such as tofu, lentil patty, or falafel patty. I'm sure they are a good choice too.
In the final step, add curry sauce. Just put the sauce on a serving plate according to your wishes. I'm sure it would be difficult to form sauce on a serving plate. Not always the sauce we make will have a good texture. But that doesn't matter at all. The most important thing is taste.
The Results
Stunning! And let your eyes eat this dish first. I was even shocked after tasting all this combination. Seriously, I'm not lying.
I feel lucky to get a delicious type of sweet potato to bake using the air fryer. The texture of the sweet potato flesh feels as soft as butter. Coupled with the texture of asparagus which is still crunchy, I love them.
