Hello foodie, š«¶š®š³ I hope you are happy and healthy.Today i will share a healthy and delicious cake recipe. Try this easy-to-make Ragi Flour, Dates, Anjeer, and Banana Cake. It's packed with wholesome ingredients and doesn't require eggs ā we'll be using flaxseed powder instead. Let's begin !
Ingredients:
š„Æ 1 cup ragi flour (finger millet flour)
š„Æ 1/4 cup wheat flour
š„Æ 1/2 cup dates (remove the seeds)
š„Æ 1/2 cup chopped anjeer (figs)
š„Æ 1 ripe banana, mashed
š„Æ 1/4 cup flaxseed powder (mixed with 3/4 cup warm water, let sit for 15 minutes to thicken)
š„Æ 1/4 cup carrot
š„Æ 1/2 cup water
š„Æ 1/4 cup coconut / olive oil
š„Æ 1/2 cup chopped nuts( almonds, walnuts, raisins and cashew nut)
š„Æ 1 teaspoon baking powder
š„Æ 1/2 teaspoon baking soda
š„Æ Pinch of salt
Preparation methods
šŗ First, soak the dates and figs for one hour, then Grind it to make a paste.
šŗ Preheat your oven to 180Ā°C and grease a cake tin with oil and sprinkle sesame seeds.
šŗ In a separate bowl, mix together the flaxseed powder mixture or oil and mix well. Add dates and fig mixture and mix .then add mashed banana , carrot and mix well together.
šŗIn a separate bowl, sift the dry ingredients (ragi flour, wheat flour, baking soda, and baking powder) through a sieve.
šŗ Pour the dry ingredients into the wet ingredients and stir until just combined.To adjust and improve the batter consistency, add water to reduce its thickness.
šŗ Add nuts and pinch of salt to the mixture and stir until well combined.
šŗ Pour the batter into the prepared cake tin and smooth the top with a spatula. For decoration, sprinkle walnuts and sesame seeds on top of the batter before baking.
šŗ Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
šŗ Once baked, remove the cake from the oven and allow it to cool in the tin for minutes before transferring it to a wire rack to cool completely.
šŗ Slice and serve your delicious Ragi flour Cake .
