Multigrain Spinach Pasta: A Nutritious Twist on a Classic Dish

I hope you are happy and healthy. Today i will share a healty pasta recipe. In my effort to create a healthier version of pasta, I recently experimented with multigrain flour and spinach puree.The process involved several steps, but the outcome was both delicious and nutritious. Here's a detailed account of how I made it and how my family responded to this culinary adventure.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:
🫕2 cups multigrain flour
🫕1 cup spinach puree
🫕 1 teaspoon salt (divided)
🫕 1/2 teaspoon ajwain (carom seeds)
🫕 Water, as needed
🫕2 tablespoons oil (divided)
🫕1 teaspoon cumin seeds
🫕3-4 garlic cloves, finely chopped 🫕1 large onion, finely chopped
🫕 3 large tomatoes, finely chopped
🫕 1/2 cup tomato sauce
🫕Fresh basil leaves,
🫕1/2 teaspoon black pepper powder
🫕 pasta seasoning
🫕 carrot, capsicum, cabbage chopped

𝙎𝙩𝙚𝙥 𝙗𝙮 𝙨𝙩𝙚𝙥 𝙧𝙚𝙘𝙞𝙥𝙚
𝙋𝙧𝙚𝙥𝙖𝙧𝙚 𝙩𝙝𝙚 𝙙𝙤𝙪𝙜𝙝
☀ In a large bowl, mix the multigrain flour, spinach puree, 1/2 teaspoon salt, and ajwain. Add water gradually and knead the mixture into a smooth dough.
☀ Cover the dough and let it rest for at least 20 minutes.

𝙈𝙖𝙠𝙚 𝙩𝙝𝙚 𝙎𝙖𝙪𝙘𝙚
☀ Heat 1 tablespoon of oil in a pan and add cumin seeds. Once the cumin seeds crackle, add the finely chopped garlic and sauté until golden brown. Add the chopped onions ,green chilli and sauté until they turn translucent.

☀Add the chopped cabbage, carrot, capsicum and tomatoes and cook until they become soft and mushy.

𝙋𝙧𝙚𝙥𝙖𝙧𝙚 𝙩𝙝𝙚 𝙙𝙤𝙪𝙜𝙝
☀Roll out the rested dough into thin rotis (flatbreads) and cut them into thin strips.

☀In a large pot, bring water to a boil, add 1/2 teaspoon salt and a little oil.Add the pasta strips to the boiling water and cook until they are done. Drain the pasta and set it aside.

𝘾𝙤𝙢𝙗𝙞𝙣𝙚 𝙚𝙫𝙚𝙧𝙮 𝙩𝙝𝙞𝙣𝙜
☀Add the boiled pasta strips to the tomato-onion mixture.Add the tomato sauce, basil leaves, black pepper powder, and pasta seasoning.

☀Cook on low heat for a few minutes, allowing the flavors to meld together.

☀Serve the hot, healthy pasta and enjoy!

I made this dish for my husband and myself as an experiment. My husband loved it and appreciated the healthier twist. However, my daughters preferred their regular pasta and were not as interested in this version. Despite their preferences, I was pleased with the outcome and felt accomplished in creating a nutritious alternative.This experiment was a fun and rewarding experience. It reinforced my belief that healthy eating doesn't have to compromise on flavor. I am looking forward to refining this recipe further and maybe even winning over the rest of my family.
