Today I would like to start the day with a delicious vegan sandwich that we made at home to share with the family.
For the preparation of this recipe, we will need:
250 grams of lentils
1 head onion
1 paprika
Chives
3 sandwich breads
Cilantro
2 tomatoes
2 cloves garlic
Olive oil
Lettuce
Oregano and basil powder
We hydrate the lentils from the day before, and proceed to drain and put them in a food processor along with half of the onion, half of the paprika, and the chives.
When we finish processing our ingredients, we will have a mixture to which we will add salt to taste, oregano and basil. Mix to incorporate well and proceed to make the lentil croquettes on a hot griddle.
Preheat the frying pan, add a tablespoon of olive oil.
With the help of a spoon, put the mixture in the pan and let them cook over low heat until the jackets are browned on both sides.
Cut the tomatoes and half of the onion and paprika into rounds and set aside. Once we have all the ingredients we proceed to fill the bread.
We put the filling in layers to make it much easier and to feel the assorted flavor of the sandwich.
Finally we put the sandwiches, already filled, on the griddle to toast the bread.
We have 3 teenagers at home and they loved the sandwiches. It is a very fun and nutritious way to offer vegetable protein to the kids who need it for their development. I recommend you to prepare this delicious recipe as a family and enjoy it for dinner.
