Good morning to all my Hive friends! How are you doing? I recently bought some white beans from the market, and we usually incorporate them into our meals in a simple way. However, kids often don’t like eating beans regularly. So, I decided to prepare a curry to mix with rice, making it tastier for them. It turned out to be delicious, and today I’m excited to share this recipe with you all.
White beans are a low-calorie, highly nutritious legume. They are rich in protein, fiber, and essential nutrients like iron, magnesium, and potassium. These beans are great for digestion and help maintain healthy iron levels in the body. By preparing a curry like this, you can ensure that the whole family gets the nutrition they need. White beans are particularly beneficial for those on plant-based diets.
Let’s dive into how to make this simple yet nutritious white bean curry!
Required Ingredients...
🍀 White beans 100g.
🍀 1 1/2 Cup of coconut milk .
🍀 1 teaspoon of chili powder.
🍀 1/2 teaspoon of turmeric powder.
🍀 1/2 teaspoon of curry powder.
🍀 Salt as needed.
🍀 Onion, finely chopped.
🍀 Some curry leaves.
🍀 A few chopped green chillies.
🍀 A few cinnamon sticks.
🍀 A little bit of finely chopped garlic.
🍀 2 pieces of Rampe.
🍀 1 cardamom pod.
🍀 2 Tablespoon of coconut oil.
First, start by soaking the dried white beans in water for at least 5-6 hours, as this makes them easier to cook. After soaking, rinse the beans thoroughly with fresh water. Then, take a large enough pot, add fresh water, and place it on the stove. Let the beans simmer for about 15-20 minutes until they soften. After that, finely chop the onions, green chilies, garlic, and other seasonings, and set them aside separately. Next, place a pan on medium heat and add about 2 tablespoons of coconut oil. Once the oil heats up, add the garlic, onions, curry leaves, fennel seeds, cinnamon sticks, and rampe leaves. Stir everything well and let it fry for about a minute. After that, add chili powder, turmeric powder, curry powder, and salt to the pan. Mix everything thoroughly to combine the spices well. Then, add the cooked white beans to the mixture and stir well to combine everything thoroughly. Next, add coconut milk and let it simmer for about 4-5 minutes. Finally, remove the dish from the heat. So, this delicious curry is ready! I've enhanced the flavor by adding coconut oil. The white beans curry pairs well with rice, roti, or bread. If you're looking for a nutritious meal, this is a great option to prepare. Well then, I'll catch you all again with another exciting dish!
