Last night, I prepared a delicious curry using Spiny Gourd to accompany rice for dinner. This unique vegetable is not just tasty but also holds medicinal properties. It is a popular ingredient in South Asian cuisine. If you're curious about its nutritional benefits, incorporating this vegetable into your meals two to three times a month can supply your body with essential antioxidants, dietary fiber, Vitamin C, iron, and magnesium. This dish is suitable for all age groups and serves as an excellent addition to a balanced diet. It aids digestion, helps regulate blood sugar levels, and is particularly beneficial for individuals with diabetes.
Now, let’s dive in and see how to prepare this nutritious and flavorful curry!
Required Ingredients...
🍀 Spiny gourd 200g.
🍀 Two pieces of pandan.
🍀 2 cloves garlic finely chopped.
🍀 curry leaves.
🍀 A few chopped green chillies.
🍀 A crushed cardamom pod.
🍀 Onion, finely chopped.
🍀 A chopped tomato.
🍀 1 1/2 cup of coconut milk.
🍀 1/2 teaspoon of chili powder.
🍀 1/2 Teaspoon of turmeric powder.
🍀 Salt as needed.
🍀 1/2 Teaspoon of curry powder.
🍀 1/2 teaspoon of Fenugreek.
🍀 2 tablespoon of coconut oil.
Method of making....
First, thoroughly wash and clean the Spiny Gourd. Once cleaned, cut it into small pieces as shown below. This makes it easier to cook and allows the flavors to blend evenly during preparation.
If needed, you can remove any tough seeds, but usually, the seeds add to the texture and taste of the curry.
Next, finely chop the onions, garlic, green chilies, and tomatoes. Ensure all ingredients are sliced thinly to help them cook quickly and evenly, enhancing the flavor of the curry.
Next, take a pan and place it on the stove. Add about 2 tablespoons of coconut oil. Once the oil is hot, add fenugreek seeds, garlic, onions, pandan leaves, curry leaves, and cinnamon. Stir the mixture well and sauté it until the onions turn golden and fragrant.
Next, add chili powder, turmeric powder, curry powder, and salt as per taste to the pan. Then, add the chopped tomato pieces and mix everything thoroughly. Stir well to ensure that the spices coat the ingredients evenly, allowing the tomatoes to soften and combine with the mixture.
Next, add the Spiny Gourd pieces to the pan and mix well. Pour in about one cup of coconut milk and stir to combine all the ingredients evenly. Allow the curry to simmer for cooking 7 minutes,
Finally, once the curry is well-cooked, add the remaining coconut milk to the pan. Mix thoroughly while allowing the coconut milk to thicken to your desired consistency. Once the curry reaches the perfect texture and taste, remove it from the heat.
Now this delicious curry is ready! You can enjoy it not only with rice but also with bread for a wholesome meal. Give it a try this way and experience its unique flavor.
