To make this, you will need the following ingredients.
- Potatoes - 2
- Parwal (pointed gourd) - 6-7
- Fenugreek seeds for tempering
- Oil
- Green chilies - 5-6
- Garlic - 5-6 cloves
- Black pepper 1/2 spoon
Method
- Peel the potatoes and parwal, and cut them into small pieces. Finely chop the garlic and green chilies.
- Heat some oil in a pan.
- Add fenugreek seeds, chopped garlic, and green chilies to the hot oil and sauté them.
- Add the potato and Pointed gourd pieces to the pan and mix well. Add salt to taste and black pepper cover, and let it cook.
- Stir the sabzi occasionally until the potatoes and parwal are tender and the dish is dry.
- Serve the hot aloo parwal ki sabzi with roti, paratha, or dal chawal. It’s a popular dish in my house and is often made. You can also pack it in a child's lunch box since it is a dry dish.
