Hello Vegans, Foodies and Hivers!
I had a small harvest from my container garden yesterday and I thought of adding them to the veggies I would like to cook. Similar to the Stir-fried Rice, the previous week, this can be eaten as main dish or by-dish. As by-dish, this can be eaten with boiled rice. I had a slice of dark bread and margarine and the husband had rice. Well, the choice is yours.
I only used one cucumber, sliced it thinly. There were not many ripe tomatoes harvested , just 5 or 6 pieces but this also helped in keeping the ingredients moist.
Without further ado, here is the recipe below.
Stir-Fried Veggies splashed with Simple Spices
For 4 servings:
Prepare the ingredients, wash, dry and cut according to
the desired size (see images for idea).
Ingredients
2 cloves garlic, crushed
1 Zucchini, sliced
1/2 cucumber, thinly sliced
1 carrot medium size, cut into thin slices
a handful cherry tomatoes
1 cup spring onions, cut into small pieces
1 red onion, sliced
1 cup broccoli cut into florets
1/2 Aubergine (Eggplant) , 1/2 if you use the chubby one , if you
are using the thinner elongated type, use 1 piece, cut into slices .
1 red pepper, cut
Soy sauce
teriyaki sauce
a dash of chili powder, (careful not to give too much)
Olive oil or vegetable cooking oil
salt
pepper
Preparations:
1... In a hot pan with 2 tablespoons of oil, fry the garlic until the pieces become golden brown in color. Add the carrots, the eggplant slices and cherry tomatoes. Stir-fry all until the eggplants crumble.
2... After about 5 minutes, add the onions, spring onions, broccoli...then add zucchini and the cucumber and all the rest of the vegetables. Spice with 1 tablespoon soy sauce, mix and stir-fry until all veggies are coated with the sauce. Stir continuously until all are semi soft.
3...Sprinkle 2 tablespoons of Teriyaki sauce to coat all the pieces . This sauce is a bit sweet which will spice-up this dish. Stir fry to combine, when the broccoli and carrots are soft, then spice with salt and pepper according to taste preferred.
Just remember that soy sauce and teriyaki sauce have salt content already, so taste first before adding salt.
