At times when I am having errands to make, I always cook light meals, cooking either before or after lunch or dinner. Today, I am sharing here a vegan dish that is so easy to cook which took me less than half an hour to make. Before going out of the flat, I had already thought on what to cook since I have leftover veggies in the fridge. The tofu and cherry tomatoes had been looking at me and begged to be cooked, they had been in the fridge for some days. I do not usually place tomatoes in the fridge , but last week, we`ve had hot days!
We do not have an asian store in our district, it's a pity that I need to go to our old district to get my asian ingredients. At any rate, since I was out on that day, I passed by a branch of a discount supermarket that had fresh mung beans sprouts. This is easy-peasy cooking and I am telling you dear friends that this is delish!
I forgot to take pics during the cooking process, lol! But this is just a stir-fry method. So please stay put as you read on...it's Easy-Peasy as I said!
Vegan Quick Tofu and Mung Bean Sprouts
150 grams fresh mung bean sprouts
1 cup diced tofu
2 cloves crushed garlic
1 cup of cherry tomatoes,halved
3 stalks of spring onions - chopped
1/2 red bell pepper - chopped
salt
pepper
soy sauce
teriyaki sauce
vegetable oil
Cooking process:
1... Place the tofu in a bowl, add 1 tablespoon soy sauce and coat all the pieces.
2... In a hot pan with enough cooking oil, fry the tofu for about 5 minutes or ´til brown in color, stirring occasionally. Remove in a bowl and reserve for later use.
3... Blanch the mung bean sprouts by dipping them in the boiling water for a minute ( to get rid of bacteria), remove and place in a colander to drain excess water...reserve for later use.
4... In the same pan, transfer the oil used for the tofu into a container and leave about 2 tablespoons of cooking oil, then fry the garlic, followed by the spring onions, the cherry tomatoes, then toss in the bell pepper. Stir fry everythings until the tomatoes crumble. Add the sprouts , stir until well combined with the rest of the ingredients. Sprinkle 1 1/2 tablespoons teriyaki sauce, mix well and add the salt and pepper according to your taste preference.
