The last few days, activities at home are very busy, preparations for celebrating the big day have kept me busy in my mother's kitchen. Today I want to share a special recipe for you, which is processed vegetables from garden products that are very easy to find, namely bamboo shoots.
Do you know what bamboo shoots are? Bamboo shoots are one of the vegetables that come from very young bamboo or in other words often called young bamboo shoots, bamboo shoots have a conical shape, point to the top and have a hard and hairy outer skin and a smooth texture. Bamboo shoots are one of the most popular vegetables in Indonesia.
Bamboo will grow a lot of shoots usually in the rainy season, at that time you can harvest a lot of young bamboo, the bamboo harvest is usually done when the bamboo has reached a height of 15 to 20 cm from the ground, if it exceeds that height usually bamboo will grow into saplings of bamboo complete which has a hard texture so it is not tasty when cooked.
Ingredient Used
Basic material
- 1 bamboo shoot
- 1 cup thick coconut milk
Ground Spices
- 1 pecan
- 2 sunti acid
- 3 cm turmeric
- 3 cloves of garlic
- 4 cloves of red onion
- 6 dry red chilies
- 12 pieces of cayenne pepper
Using the right ingredients to make bamboo curry is the right choice, so the resulting taste really doesn't disappoint Here I use fresh herbs that are already in stock in my kitchen. Well now I will invite you to start preparing the bamboo shoots first.
Cooking Procedure
1. Bamboo Shoot Preparation
Step 1 Peel the outer skin of the shoots until only the white part remains or the part that looks young and not hard.
Step 2 Next, cut the bamboo shoots into small pieces, I manually if you want to use a cutting tool you can also
Step 3 Heat the water until it boils then add the chopped bamboo shoots
Step 4 Then boil for about 30 minutes or until the bamboo shoots are really soft and perfectly cooked, well, if it's cooked, drain the bamboo shoots, avoid being submerged with the old ones so that the bamboo shoots are not bitter.
2. Start Cooking
Step 1 STo start cooking the curry, I start by grinding the prepared spices.
Step 2 Then stir-fry the ground spices into the preheated oil, stir-fry until fragrant.
Step 3 Next add a little water, so that the spices do not dry out so that the spices are cooked perfectly.
Step 4 The next is to add boiled bamboo shoots and then cook again for up to 10 minutes.
Step 5 Now, after the spices seep into the spices, I start adding 1 cup of thick coconut milk and cook it again and add pieces of red chili according to taste.
Step 6 Finally, don't forget to season with 1 tablespoon of salt and add a little mushroom broth to your taste.
Serving Suggestions
These young bamboo shoots, I usually serve with warm white rice or brown rice, are perfect for lunch for you and your family. You know that serving bamboo shoot curry sauce with a combination of thick coconut milk greatly affects the quality of the taste of the bamboo shoots. If you want to add a combination of other types of vegetables, it's also very good for that, now I don't like it if you mix too many bamboo shoots with other types of vegetables because I used to be very happy with curry bamboo shoots like this.
The distinctive taste sensation of bamboo shoots is very pronounced, crunchy, slightly sweet and savory. The thick gravy of this special curry really stirred my appetite. Add chili.
