Hope our day is going well; today I would take us on a journey on how to made a simple, nutritious vegan fried rice.
Ingredients
4 cups of rice
½ cup of vegetable oil
2 medium spring onions
2 cloves of garlic
1 inch ginger
2 teaspoons of turmeric
15 pieces of medium-sized fresh pepper
1 teaspoon of thyme
9 medium-sized carrots
1 medium-sized cucumber
1 small-sized cabbage
Salt to taste
Preparation
I start by rinsing my pepper and putting it in my grater together with garlic and ginger to grate them, and I set them aside.
I went ahead to rinse my rice and set it aside.
I placed my pot on medium heat, I added the quantity of water that would be enough to cook the rice, and I poured in my turmeric, grated pepper paste, thyme, salt, and rice.
While the rice was in the fire, I went ahead to rinse and chop my veggies.
By the time I was done chopping all my veggies, the rice that was on fire was already soft, and the water in it had dried up, so I dropped it from the heat.
After which I placed another pot on low heat, poured my oil, and allowed it to get hot a little bit, followed by my onion, and allowed it to sauté.
I added my mixed vegetables and cooked for two minutes.
I added my cooked rice and stir-fried for about 4-5 minutes, after which I turned off the heat.
For garnishing, I chopped my carrots, cabbage, and cucumber.
And you delicious fried rice is ready 😋
