Join me let's make a simple sweet potato hash for breakfast.
Ingredients
4 sweet potatoes
2 medium-sized spring onions
3 large carrots
1 teaspoon of blended pepper
1 clove of garlic
1 inch ginger
500 ml groundnut oil
Salt to taste
½ teaspoon of turmeric
Preparation
First I started by washing the sweet potato, then peeling off the bark.
Then I diced the sweet potato into tiny cubes and set it aside.
I went ahead and chopped my carrots and spring onion and also set them aside.
I placed a pan on medium heat and added my groundnut oil and allowed it to get hot a little bit.
Then I sprinkled a little salt on the chopped sweet potatoes and put them in the oil for them to fry and become crispy.
Then I brought them out of the hot oil
After that I reduced the oil and left about two teaspoons of oil.
I added my chopped onion and allowed it to cook for one minute. Then I added my blended pepper, garlic, and ginger and allowed it to cook for an additional minute.
I added my chopped carrots and spring onion and stirred.
Then I added my turmeric and salt to taste. Then stirred.
After that I added my fried sweet potato and stir, allowed on low heat for one minutes. Then i turn off the heat.
Food is ready 🤤
