Greetings lovers of healthy vegan π± meals and dishes β€οΈ.
I remembered this very recipe immediately I saw corn π½ everywhere showing we are in the corn season again. In my country Nigeria π³π¬ we do have seasonal corn periods which is like about three (3) times round the year.
This seasons enables one to eat as much corn π½ as possible in variety of ways, but this recipe is one I learnt from my mother while growing up. This way of preparing the corn brings a good meal out from the corn π½ because its grated or blended if needed in more softer texture, and spiced up according to desired.
This process of preparing this recipe is one that needs patience, so we usually prepare it for lunch π₯ , taking our time since everyone has eaten breakfast π³. Its straightforward, simple but needs some time to properly be cooked once every ingredient is ready.
However, you can choose to prepare this meal in your own version adding or removing what ever desired to taste.
Here I show you how to prepare this spicy πΆ vegan π± meal π₯π½.
INGREDIENTS:
3 large young corn
1 medium onions
4 hot paper
1/2 teaspoon of curry powder
1/2 teaspoon of salt
1 tablespoon of tomatoes paste
2 tablespoons of vegetable oil
Mint leaves π
STEPS FOR PREPARATION:
Step 1.
I will start this recipe by first removing the corn wrapper which I will use later to wrap the corn meal.
Step 2.
Then will take some corn wrapper, chop off the two edges, wash them thoroughly and keep readily.
Step 3.
Next is to scrape the corn off the heads gradually using the knife π½πͺ .
Step 4.
Then pour it into a bowl π₯£ for washing and drain afterwards.
Step 5.
I will wash and slice the onions and hot paper .
And also the mint leaves π
Step 6.
Then will take the corn for grating with manual grater. Adding the onions and pepper πΆ π§ .
Step 7.
Once grated, will take it into a bowl , adding the ingredients one by one.
And will stir them in properly.
Step 8.
The sliced mint I will add to the corn and incorporate in adding little water to properly mix well.
Step 9.
And will set to wrap it up using the corn π½ wraps.
Step 10.
And gradually will wrap up all the corn .
Step 11.
Take it into the pot for cooking added some water and will cook for at least 40 - 50 minutes for properly cooking.
Step 12.
And once time elapsed, I will take into the basket π§Ί to cool down a bit.
Then unwrap as here above .
SERVING:
How delicious and appetizing. I will serve the spicy vegan delight corn meal while still warm for that great irresistible taste of a young corn π½ meal. You will love it if you try making it.
