¡Nachos para un viaje!


Hello, my foodies! I have a trip coming soon, I'm very excited about it and I'm planning on making my own snacks and carrying from home some of my meals already pre-cooked. In my experience, having snacks is highly important, you don't know when you are going to need a boost of energy to keep going, or if something happens and you can't get food in the place you are going to, the prices could be also inconvenient. That's why I'm making this option for nachos, there are many other styles I like to do but I also like working with what I have.

¡Hola, mis foodies! Tengo un viaje pronto, estoy muy emocionada por ello y estoy planeando hacer mis propios snacks y llevar de casa algunas de mis comidas ya pre-cocidas. En mi experiencia, tener snacks es muy importante, no sabes cuándo vas a necesitar una recarga de energía para seguir adelante, o si pasa algo y no puedes conseguir comida en el lugar al que vas, los precios también pueden ser un inconveniente. Por eso hago esta opción de nachos, hay muchos otros estilos que me gusta hacer pero también me gusta trabajar con lo que tengo.

(To make the boiled corn, add enough water to cover the amount of corn you want, and cook it in a low heat until soft, it takes a few hours)
First, we need to grind the corn. You will get the best texture if you dry the boiled corn with a fan so there is not much water on them, also keeping them frozen before using them makes the ground corn look more like flour than dough.
Once it is done, mix all the dry ingredients.

(Para hacer el maíz hervido, añade suficiente agua para cubrir la cantidad de maíz que quieras, y cocínalo a fuego lento hasta que esté blando, tarda unas horas)
Primero hay que moler el maíz. Conseguirás la mejor textura si secas el maíz hervido con un ventilador para que no tenga mucha agua, también mantenerlo congelado antes de usarlo hace que el maíz molido se parezca más a la harina que a la masa.
Una vez hecho esto, mezclar todos los ingredientes secos.

Add hot water, slowly, and mix with a spoon in the middle until you get half the dry ingredients mixed, then mix the rest and knead with your hands. Add more water if needed.
*This is not an exact measure since it depends oh how dry is the corn and the type of flour, mine was a not-so-good one, it's wheat flour but has cornflour texture; water is usually about 55% of the weight of the dry ingredients.
Let it rest for half an hour.

Añadir el agua caliente, poco a poco, mezclar con una cuchara en el centro hasta conseguir mezclar la mitad de los ingredientes secos, luego mezclar el resto y amasar con las manos. Añadir más agua si es necesario.
*Esta no es una medida exacta ya que depende de lo seco que esté el maíz y del tipo de harina, la mía no era muy buena, es harina de trigo pero tiene textura de harina de maíz; el agua suele ser un 55% del peso de los ingredientes secos.
Dejar reposar media hora.

Pasado el tiempo de reposo, extiéndela muy fina, unos dos milímetros, puedes hacerlo en plástico y luego transferirlo a una bandeja, hacerlo en la mesa y transferir los trozos cortados, o como hice yo, que tengo mi tapete de silicona y lo trabajé directamente. Usa el plástico encima para que la masa no se pegue al rodillo, luego corta los triángulos con un cuchillo de plástico o de madera, o con un cuchillo sin filo.

Put in the pre-heated oven at medium heat, 200C°, until they are dry and don't bend but break with a snap. I used the grill of my oven so I had to turn them around to get both sides nicely dry and cooked. They have to be very thin before they get crunchy and not hard to bite.

Poner en el horno precalentado a fuego medio, 200C°, hasta que estén secos y no se doblen sino que se rompan con un chasquido. Yo utilicé el grill de mi horno así que tuve que darles la vuelta para que quedaran bien secos y cocinados por ambos lados. Tienen que estar muy finas para que queden crujientes y no sean duras de morder.

Serve in a beautiful bowl with some delicious sauces, I used soy mayonnaise with scallion, some smashed black beans, and a sweet potato cream I made by blending boiled sweet potato with oil, salt, pepper, and paprica. You can improve any of them with a tea spoon of spicy sauce, my dad loves spicy so we added a bit to all of them.

Sirve en un hermoso tazón con algunas deliciosas salsas, yo usé mayonesa de soya con cebollín, caraotas machacadas, y una crema de patata que hice licuando la patata con aceite, sal, pimienta y paprica. Puedes mejorar cualquiera de ellas con una cucharada de salsa picante, a mi padre le encanta el picante así que le añadimos un poco a todas.

I hope you like this as much as we did. This picture was taken less than five minutes after the last one hahaha. I can't show you with these, but if you keep them in a airthight container or in a sealed bag, they can last over a week, since they don't have any extra fat nor water left.

Espero que les guste tanto como a nosotros. Esta foto fue tomada menos de cinco minutos después de la última jajaja. No les puedo enseñar con estos, pero si los guardan en un recipiente hermético o en una bolsa sellada pueden durar más de una semana, ya que no tienen grasa extra ni agua.

Siii, y crocantes. Recuerdo los que hice para Caracas, pero esos eran con harina integral y esa marca con la vendieron más u.u con maiz saben a cotufas

I have never made nachos with actual corn in it. I am going to do this. I bet the taste is amazing compared to the ones made from just flour. I hope you have a great trip. A trip and nachos sounds like a lot of fun.😊

Yes, they taste better, a little bit like popcorns. You can make them baked or fried, but for these ones I don't recommend cooking, reserving, and then frying as is often done with tortillas because they will burn very fast.

There are other ways, in a pan, fried, but I like this one, it's healthier and no need to be standing there all the time haha.

I'm glad you liked it! try them, the amount you get for a very low price is awesome haha.
If the dry kernels to boil are hard to find, half a cup of flour and half a cup of fresh or canned corn can make it for texture and flavor 😁
