Days ago, my husband's Uncle celebrated his 84th birthday. As we all know, human life spans are becoming shorter these days. His children decided to have a simple party as their way of Thanksgiving.
I can no longer recall when it started, but the Swine flu affected the price of pork meat this year. So, here in my husband's hometown, they opted to raise Baboy ramo/Native pigs.* It was cheaper, and I was even surprised that it wasn't weighed to determine its price. (Should be sold per kilo.) Since the one who will be cooking is my brother-in-law, whose house is next to ours, the pig was slaughtered in our backyard.
I know they are meant to be eaten and serve as food for humans, but hearing its cry while these guys were slashing its neck? Damn, I pity her so much 😥. I supposed my son and I would be watching, but I closed our door and windows since I couldn't bear the scene. Others might have laughed at me, but it felt like she was shouting for help. Yet I just ignored her.
This is how we usually cook for parties here in the countryside. As dishes are in bulk, that means it will consume a lot of gas. In order to save gas, gentlemen gather wood to be used to light fires. It might amaze you that these people are doing this for free. Unlike in the city, you will need to hire a chef.

But he was heavy, and holding him for a long time was making my arms numb and my waist ache.
That made me decide to put him on the bed, and the tantrums started until he fell asleep 😆.
I was about to sleep, too, in broad daylight, but I heard a loud knock at the door.

Honestly, I don't eatdon'ton't know the person who cooks, as it requires effort to prepare. Intestines should be clean.
It's been years since I tasted a delicious dinuguan, and knowing that the ingredients are fresh, I excitedly took a bowl.
I took some rice and prepared to eat lunch.
First bite of a spoon, it tastes weird. The second attempt, it was like I could still hear the pig crying! 😟
Oh no! I could no longer bear to eat the dish! For the first time, I set aside the food as I wanted to throw up!
